mmmm, beans!

  • I bought some Italian corona beans, which are also called gigantes beans in Greece. They look similar to lima beans, but different They are HUGE when cooked! Cooking Light has a recipe on their site for Gigantes Beans in Tomato Sauce. It includes crushed tomatoes, carrots, celery, onions, and various seasonings. I made it, but added my own touch to it - smoked tomatoes I have a Cameron stovetop smoker which I used to smoke 8 tomatoes. I chopped them and added them to the beans and the whole dish was perfect!

  • I love beans... but they don't love me... or at least anyone within a sniffing range won't love me LOL

    Is there anything I can do to prevent my embarassing aftermath when I eat beans? I have avoided them like the plague because of my "problem".
  • Do you have problems even if you make them yourself and soak them overnight (rinse them afterwards)?
  • There's basically two remedies I know of. One is the product Beano, which contains the enzymes needed to prevent "emissions." The other requires eating beans regularly (and having patience) until your body builds up enough of the enzymes in your body. I don't know if your body will still build up it's own enzymes if you use Beano, but eat beans regularly.
  • I am an advocate of eating beans daily and can vouch that a body can adapt.
  • I have found that the more beans I eat, the better my body gets at handling them.

    I've been trying to branch out and try new beans since I tend to use the same ones over and over. Got my hands on some tarbais beans, waiting on my copy of Veganomican so I can make cassoulet with them.
