Default SBD: Lowfat ricotta unavailable in UK...make your own!

Hello,
I'm on the South Beach Diet, and one of the staples is lowfat ricotta cheese. I searched everywhere for it (Asda, Tesco, Waitrose, Sainsburys, etc), with no luck.
So, I found a recipe online and tried making my own. This recipe is incredibly easy and makes enough for two portions of SBD ricotta creme.

The buttermilk that's leftover goes great in porridge (Phase 2) as well as the strawberry panna cotta that's posted elsewhere on this site.

Here's the recipe I found:

Ricotta is a very easy cheese to make at home. In the old country it is made with whey which is a by-product of cheesemaking. It takes a lot of whey to make a cup of ricotta but it is easy to make it from milk, either skim, regular or regular milk with a cream added.



2 quarts milk, either skim or whole
1 pint cream (omit for SBD)
1/3 cup lemon juice (1/4 cup lemon juice if omitting the cream)
# Put milk and cream if using it into a pot and slowly bring to a temperature just below the boil.
# Stir from time to time. The milk will start to foam and sweat.
# Remove from the heat and stir in the lemon juice.
# You should notice the tiny particles of white protein starting to coagulate.
# Let sit for an hour or two.
# Pour into a colander lined with fine cheesecloth and placed over a pot.
# Allow to drain.
# When cool tie the four corner of the cheesecloth into a knot and hang to drain for a few hours. (If you don't have cheesecloth, use an old pillowcase that you've washed in hot water, ideally with a little bleach)
# You can add a little cream to give a richer moister flavor along with a pinch of salt, herbs or other flavorings.

wow ive never thought of making ricotta! i've bought low fat cottage cheese before though, at safeway or the co-op which you could maybe use as a substitute?

edit: sorry read cottage cheese and not ricotta!

I hace read about a few recipes using ricotta and they mentioned to substitute cottage cheese if ricotta unavailable.

I am sure you could get it from fancy cheese shops if not supermarkets though.
