Low Fat Strawberry Sweetie Pie
Ingredients:
Duncan Heinz Low Fat Brownie Mix
1 egg white
200 grams frozen strawberries
1/3 c sugar
1tbsps Lemon Juice
1c Ultra Low Fat Coolwhip
Directions:
Bake brownies as per directions in a 8x8 pan.
Let cool and turn out of pan.
Place a 4-inch parchment paper collar around cooled brownies.
Beat egg white, lemon juice, sugar and strawberries together until tripled in volume (about 10 minutes)
Fold in Coolwhip
Pour on top of brownies and spread evenly. Garnish with a few sliced strawberries and a drizzle of chocolate syrup.
Freeze about 4 hours,
Remove parchment paper and serve.
Serving=1/8 of the pan

Thank you guys so much. I loved all the great things you sent my way. You really made my day. I did have a good day even though my family didn't do anything for me again as usual. But my husband did get me a cake so that was nice. I was thinking I wouldn't even get that but it was so much with the pie and all but I had some anyway.LOL
My husband and daughter took me out to the buffet. I wanted to go to this place called cliffs but my husband didn't want to go last night because he wanted to take me shopping to get me stuff for my birthday. So he said he would take me another night. So we went to the buffet then to walmart. I got a new winter coat, some stockings (the warm ones), and 4 pairs of pants, and some slippers. So I did great in the gift dept.. Plus today my husband did all the cooking and cleaning up and made me breakfast (pancakes). The only thing I did all day was go for an extra long walk this morning for 1 1/2 hours. I counted the hills on this new way of walking. It is 4 very steep hills straight up and 1 long hill which is no problem after climbing the other 4.LOL Then put dishes in the dishwasher twice. But he did all the rest and there were a total of 7 of us for dinner. He even cleared the table. So I did have a great day afterall.
I also got a beautiful gold bracelet with hearts on it from my friend and a 16 qt. pan from my parents. So I am happy with everything.
How was everyone's thanksgiving? Did you all eat too much? Don't worry we can get back on track again tomorrow.
