I was in a cooking mood today so that's what I did. I made Chocolate Chili, meatloaf, turkey cranberry muffins, roasted a spaghetti squash, velvety butternut squash with pecans, cauliflower soup, sunshine sauce, compliant ketchup for my meatloaf, and red pepper sauce. I have some chicken breasts brining and I'll grill them tomorrow. My meals will be easy this week, reheat, cook veggies, salad, eggs. About 3/4 of what I made will go in the freezer for future meals. Sometimes I just don't want to cook dinner but I do want a healthy meal. I'm having meatloaf with salad and butternut squash with pecans for dinner tonight.

Here's the recipe - I have to be gluten-free so a little different than what you are used to.

Whole30 Meatloaf

1 lb ground pork
1 lb ground beef
2/3 cup finely shredded carrots
2/3 cup finely shredded zucchini (place the zucchini in cheesecloth and squeeze out the excess water)
1 tsp dried basil
1 tsp dried rosemary
1 tsp garlic powder
2 eggs
1 Tbsp Dijon mustard

Preheat the oven to 350 F.
In a large bowl, beat the egg and combine with the carrots, zucchini, basil, rosemary, and garlic powder. Add the ground pork and beef and mix until evenly incorporated. Place the meat mixture into a loaf pan and spread the Dijon mustard over the top. Bake for 1 hour or until cooked through.

Good afternoon to you all. I took Jack to work and was home about 15 minutes and had to go to the hospital as my echocardiogram was today. I don't expect trouble, but I am still nervous if they found anything. I watch the sonogram machine and saw the old thing pumping away but he kept doing all kinds of different things and I had no clue whether it was good or bad. Going to have to wait for the doctor to call me with the results.

I left the hospital then went to Michaels and got a bunch of blue and white felt squares to make a tree skirt. I saw they had Halloween Pez so picked one up for Jackson's Halloween bag I am sending him and a roll of white ribbon then on to the next place. I went to Hancock to get 54" white cotton fabric to sew my little felt semi circles onto and couldn't find it anywhere and they only had one person in the whole store so I said to heck with it and bought 68" and decided to cut it down. I got By this time I had a roaring headache from laying flat on my back for 45 minutes so I just wanted to get out of there. I paid for it, bias tape and thread as I couldn't remember whether or not I had any white thread. I then drove through McDs because my blood sugar felt low and got a regular coke and onto Target. I bought lunchables, baked Cheetos, a box of nutter butters for Jack and his soda. I don't have any ramekins and that is what she used as a template so bought two of those figuring I might use them for something for Jack and I. I needed two beach towels but couldn't find any so bought a couple pretty bath sheets and got Jack and case of soda then checked out. Finally I was able to head home, but had a load of laundry to fold and all the groceries and sewing stuff to put away. I got that all done than collapsed in a chair. I are a bit of lunch and threw out the regular coke and crashed for a few minutes.

My son just called as he had been to visit my sister. She is coming along and in good spirits. She is slow doing things but her speech and her mobility are doing well. I am so glad about that.

Susan: Stay safe! I heard on the radio while I was driving around that poor North Carolina has something like 26 inches of rain and it just keeps circling around and coming back because of the low pressure. Meatloaf sounds good and I have never heard of chocolate chili unless you mean you make chili and it has chocolate in it. I know in Mexican cuisine they put chocolate in chili and don't put in beans. Jack won't eat chili with beans. He is from New Mexico and says it is unnatural. lol

Jean: As you usual you are busy, busy. Keep warm at the games! I have a feeling they gave me the high dose flu shot even though I am not 65 yet. I have one heck of a bruise on my arm where the injection was. Poor Jack got a fever from it but it was gone by yesterday.

Gotta go as I have to go pick up Jack in just a bit. Have a nice afternoon.

Good Evening! It's been another long day for me. :yawn: I left home at 7:30 to meet up with 12 others for a 2 1/2 hour drive to Des Moines. We toured the P.E.O. Executive Office building, then the local sister chapter provided a delicious lunch. I asked if they would share the casserole recipe and she gave it to us! It is an interesting place to say the least. Wealthy families have decorated different rooms and contributed art work, priceless cut glass pieces, vintage clothing, jewelry, etc., as well as furnishing the rooms completely from top to bottom. After we had a short meeting, we went shopping! I wasn't in the mood to try on clothes but I should have. I ended up in Barnes & Noble buying several greeting cards. Their Christmas cards were on display but I passed on them. After another 3 hour drive on a different route home, I got here about 6:30. Bob is/was helping move the bean head to another farm site so not sure when he will get home.

Susan, thanks for sharing the recipe. :T I would never have guessed zucchini would be in it. I hope the rain has quit by now, plus you and Casper are safe.

"Gma," you had a busy day today! Good news about your sister! :cp: My flu shot postcard came today but I haven't checked the dates. Ian's game has been moved up an hour tomorrow, because there are no lights and the 8th graders will play after Ian's game.

Good morning to you all. Going to be a beautiful day here, sunny and in the 80's. It was really lovely here yesterday, not too hot, not too cool.

Working on laundry, housework and getting my semi circles cut for the tree skirt. It is going to take forever. The lady who submitted the pattern only cut one row of circles at a time, but that would drive me nuts and I would never finish it so the next few days before Saturday I will work on getting them cut and cutting the fabric to size.

My niece texted us last night and said my sister can't smoke of course so some candy would be nice as long as it was sugar free. Well, I went to work at this online candy place I buy stuff for Jackson and got her a bag each of mini Hershey bars, mini Reeses cups, wintogreen Lifesavers, Brachs Butterscotch discs, Jelly Belly jelly beans, Dentyne regular cinnamon gum (I remember she used to chew this in high school all the time) so she should be set. I will have to warn her to only have a couple pieces or she will have loose stools.

Jean: Sounds like you had a long day. Days like that I want to just plunk down on the recliner and relax. We had turkey sandwiches again last night as I was so tired. Looks like the Cubbies may being going into the playoffs if they beat Pittsburgh tomorrow night. I sure do hope so as those kids have really worked hard this year.

Good Afternoon! The sun is playing hide 'n seek today. It's a pleasant 70 degrees right now so will be a nice day for a football game at 4. We are on the road again! :cp: I had to do my church duty twice this morning because I hit the "no" button when it asked if I wanted to print again. :mad: I wanted to post, not print, and lost the whole mess to never never land. At least the second time when fast because in printing I had all the account numbers. The gift shop money is in the bank, checks written and returned to the hospital for processing.

"Gma," your sister will be happy to receive the candy gift from you! :D A nice idea; you are so considerate of others!

Another day and we had a good drive about today. I am patiently waiting for the guys to go get the rest of our “stuff” so I can start making a doll. Since Beanie has taken over the area by the windshield where I thought I would put my Christmas set up ~ I don’t want him re-arranging things and ker-plop knock things on the floor. I will put things here on my sewing area. That is awhile off yet but I have to think ahead on some things. :yes:

JEAN Don't feel bad about making mistakes because everyone makes them even if they don't admit it.

Good Morning! The sun is shining and a breeze is blowing; it's supposed to hit 80 degrees this afternoon. I've been to get my nails done, stopped at the hardware store for a garage door opener light bulb, and then WM. OJ was first on my list and guess what I forgot?! :mad: I ran into one of Bob's office agents and lost my train of thought. This afternoon I have a dentist appointment and bell practice. The furnace guy called this morning and wanted to stop by "sometime" before 5. Told him today wasn't going to work so hopefully tomorrow if he has time. I hate waiting for service people!

Maggie, hope you and Beanie can agree on some space for your Christmas display. ;)

Bob is off farming, actually they are moving machinery from one site to another after he made the last trip to the elevator with the semi. I am heading to the basement to at least get the top layer of dust off. Enjoy a wonderful Wednesday wherever you are! :wave:

Good morning to you all. Well today is voting day here in Memphis. We go vote, but our votes certainly don't ever matter in this town. We usually don't even have any conservatives running in any of the offices that are city or county.

We had a yummy dinner last night. I haven't made Faye's stuff in forever so made that with some rice and had roasted Brussel sprouts with balsamic vinegar and honey. I made them in the convection oven and they came out great. I did all the prep ahead of the time during the day and pulled all the ingredients so I didn't have to hunt all over for them.

Our Cubbies won the wild card last night and we stayed up late watching them until the very end and watched the post game show. Jack never goes to be later than 9 PM during the week because he gets up at 4:45 AM but he wasn't going to miss any of it so we are dragging a bit this morning. They beat them handily 4-0 and in the 7th inning I think there was a bench clearing brawl when the pitcher purposely hit our pitcher. Our team surrounded our pitcher so no one could get to him and tried to move him to first base. One of the Pirates players that was on the bench was determined to punch and tried but was finally held back by other players. He went into the dugout mouthing off and beat the tar out of their Gatorade drink container and got tossed out. It settled down and we finished the game.

No sewing on Saturday as my dd has a tooth abscess and has to have oral surgery. She said the tooth has cost her $7000 so far and may reach $9000. She said it is the only thing that costs more than her house! I told her she needs to ask the dentist for it and save it, maybe dip it in gold. :lol: :lol: We will do it the 17th if she is better. So we are going to take Thomas to lunch on Saturday instead. It is Jack's bday and we are taking him to Red Lobster. Thomas loves all fish and seafood so he will enjoy that. We will just enjoy seeing him.

We have only 6 weeks until we leave for the cruise come Saturday. I have to get going on lists so we don't forget anything.

Jean: Bummer it's awful when you lose all the work and have to start over. Wonder why it dumped when you requested no print? I saw a cute thing on FB that said farmers equipment costs more than their house. We have commissary on Sunday so wonder if the highway will look like snow as they should be picking the cotton. I think of Civil War days and black standing out in the fields picking cotton and dragging a tote sack. Your hands bleed from the bolls. It back breaking work.

Maggie: Can be tough to find places to enjoy when you have small spaces and your pet wants to use them.

Good Afternoon! The sun has disappeared , the wind is blowing, and it looks like it could rain although none is in the forecast. The furnace man was supposed to come today, so Bob helped me clean up the basement last night. I assumed the furnace guy would call first and when I didn't hear from him by 10:30, I called the office. It is always an answering machine but "she" always calls back with in a few minutes. I told her I hadn't heard from him and wondered if he was coming. Well, something else came up so he couldn't make it today. :mad: I wanted to say something to the effect that it would have been nice if he would have let me know. So, I went to crafty club this afternoon! No one had any crafts to show so we had dessert and just visited. I enjoy it because this is the only time I see some of the gals. I drove home in a dozen raindrops but so far no more have fallen. Bob is farming again today.

"Gma," I hope Kelly can save her tooth. I spent a wad on one tooth with a root canal, crown, then another root canal, and an abscess only to have the tooth pulled years later. My visit to the dentist yesterday is going to cost me $800 for a crown. I thought the tooth had a crown but it just has a big filling. This dentist doesn't take credit cards so I'm hoping I can pay it over a couple months. Merry Christmas to me! :( Several farmers around here lease their big combines rather than buy them, then get a new one every so many years. Bob's friend isn't one that does that. Farming sure isn't like it was when we were kids. Just listening to how they plan their rows, till or no-till, fertilize, spray weed killer, etc., has turned it into a fine science. Tell me again what Faye's stuff is. :?: I know you will enjoy your lunch with Thomas!

I need to make a grocery list and brave the store tomorrow. It seems like I've had different errands all over town every day this week. I'm ready to stay home! Hope you all enjoy the rest of the day! :wave:

Good morning! Beautiful day weather wise but can't say it started out so well. Jack left at 6 to go to work and came right back in as the car wouldn't start. He said it was the battery but still we have only one car so he panicked, which is very unusual for him. I told him I had enough cash so call a taxi and I would rent a car for the day from Enterprise and have them come pick me up. He called his boss and his boss said just to have the taxi take him to Auto Zone which is open 24/7 and is only 2 miles from here and install it then come to work, which is what he ended up doing. He is on his way right now so should only be an hour late to work. If his boss wants him to he can just work an extra hour this afternoon on something. His panicking came from our vacation as he only has enough for the number of weekdays he needs and that would mess up a bunch of stuff. I finally calmed him down to listen to me and do the taxi thing. He never gets rattled but he was this morning for sure. I am waiting for him to let me know he got to work ok, but he hasn't called so I imagine he forgot so I will text him to find out if he is ok.

I got the downstairs cleaned yesterday and will clean the upstairs bathrooms today then tackle the dusting and vacuuming the first of the week. I have a load of towels and undies in the dryer and when I get done here will do my bsugar and get breakfast. Been a crazy morning all the way around.

Our election was yesterday and boy is this city going to be surprised. A white guy won. We haven't had a white mayor since 1991! What happened is there were something like 8 black liberals running and they split the black vote all to heck. He had 41% of the vote and won. He isn't employee friendly though and wanted to make a lot of cuts when he was on the city council, but most of the council is black so I doubt he gets anything done. At least the jerk that was the mayor got bounced finally.

Jack gets a haircut early tomorrow then we take Thomas out to lunch. It is Jack's bday tomorrow so we will try and make it special. He already has my gifts to him but Kelly said she would send his from them with Thomas. I am going to give T his Halloween card that has money in it. He is a money hoarder so I wrote in the card he should use the money unwisely. :lol:

Jean: They were able to save the tooth but she has 6 stitches in the gum. It had something with the cement when the tooth was fixed cracking and causing it to split someway I think. You are nicer than I am. I would have told them right off it was rude not to at least give me a courtesy call they weren't coming. Oooh I would hate to have to pay cash for a dental bill that large too. Oh that's what Susan named it. I will put it on the bottom here. I usually make this and halve it.

Faye's Stuff

serves 8
cal per serving 177

1/4 tsp pepper
1.2 tsp unseasoned meat tenderizer
2 lbs beef sirloin cut into cubes fat removed
2 cloves garlic minced
1/2 c onion
1 1/4 c ff beef broth
1/3 cup any red wine (I use burgundy)
1 tb light soy sauce
2 tbl cornstarch
1/4 c cold water

in a non stick skillet, sprayed with Pam if desired, on medium high heat, sprinkle pepper and tenderizer over beef and brown completely, then add garlic and onion and cook until onion is transparent then add broth, wine and soy sauce and bring to boiling then reduce heat to simmer for 1-1/2 hours until meat is fork tender.

Mix cornstarch with cold water and stir into mixture until it becomes gravy consistency. Serve with rice if desired.

Good Afternoon! The sun has finally come out of hiding and it looks nice outside. I ran a couple errands this morning and it felt damp and cold. We are supposed to be in the mid 80s on Sunday. Mixed up weather around here! I have vacuumed fur bunnies and washed a load of clothes which are in the dryer now. Our farm store is having a 17% off regular priced merchandise tomorrow only. I plan to go early and stock up on squirrel food! I have another stray cat that keeps trying to catch a squirrel and goes right up the tree after them. Dumb cat! He's a spook so I hope he stays that way -- I don't need any more friendly cats hanging around! Bob is farming again today. Last night he noticed something hanging on the side of the semi and it was a brace/bracket that holds the fuel tank in place. Fixing that was the first thing on their agenda this morning. He loaded tools in his pickup and hasn't been back for more so must have remembered everything he thought they might need. Doing repairs in the field isn't the easiest and being on the semi could be a challenge.

"Gma," what a way for Jack's day to get started! I hope it was good after he got to work. :hb: to him a day early! I'm not sure when our city council election is but there are finally three people running against the incumbents. We need some new ideas for our town besides "free!" I thought maybe the furnace guy might call today, but no such luck. The furnace hasn't been running so would be a perfect time to take it apart to check the innards. :dunno: I'm about ready to call furnace guy #3 and see if he's any better at coming sooner rather than later. Good morning to you all. Going to be a pleasant day today in the low 70's but going to get chilly tonight into the upper 40's then back into the 80's again. I think we are supposed to get rain today.

Jack will leave here about 7:30 to go get his hair cut. He has a cruise schedule for the thing. :lol: We then leave to go to lunch with Thomas at 11:30. Jack wanted to go to Texas de Brazil but they don't have a lunch serving on Saturday so he chose Red Lobster. I told Jack keeping my eating under control on the ship isn't too much of a big deal as I walk a lot on the ship and such, but desserts may be tempting as they have wonderful desserts. I told him if I just have to have something I will order it and have a bite then tell them to take it away or give it to Jack to eat. My big thing will be staying away from the brownies you can get 24 hours a day. They are spectacular, but my bsugar is great now and I don't want to screw that up of course.

Jean: Oh boy it's a good thing he saw that. I can't imagine what would happen if the gas tank fell off. Kaboom maybe. You gave me a big giggle this morning on accident. You were talking about your farm store having a sale and it made me think of my mom. Her favorite store was Tractor Supply! She bought her clothes in there!!! I could just see her thinking whoopee that there was a sale at the farm store.

Good Afternoon! The sun is shining and the wind is blowing; it's 72 degrees outside, nice except for the wind. I went to the grocery store this morning for a couple things I forgot yesterday. If I don't write it down it goes into the "forgotten" folder in my memory bank. :rolleyes: Bob volunteered to go to the farm store so I didn't have to. He wanted to get another pair of farm jeans. I've washed a load of sheets and need to scoop litter boxes. I also spent quite a long time sorting through condo and plane reservations on my iPad. Everything had two emails, but only one confirmation. For some reason the airline decided to change some of Beth's times, adding almost six more hours to their day. She spent hours on the phone to get it changed, and finally the confirmation came through today. Now they fly to Denver and have a direct flight to Maui. It's seven hours but they will arrive mid afternoon which is a nice bonus. I hope the rest of us are still set with our original schedule. We have the longest flight time but the cheapest tickets, go figure.

"Gma," the farm store has some women's clothing but lots more jeans, coveralls, boots, etc., for men. They also carry things like dog/cat food, farm animal supplies, grills, snowblowers, lawn mowers, heaters, sump pumps, and anything a farmer might want for the farm operation. The "home" store in Sioux City has baby chicks and ducks in the spring. The old store had a smell to it and I could still smell it on Bob's jeans after washing them. Bob thought it was from the animal food that was kept in open bins. This store is much larger and I don't notice the smell when we walk in. They have old fashioned candy plus bulk candy so I don't go in there unless I absolutely have to. I would have a hard time passing up the cruise ship desserts too. I hope your lunch was delicious! What did you have?

I need to wash a few things I don't put in the dishwasher and clear off the island counter. The grocery store had a $5.00 special on flower bouquets so I bought one for myself. :cp: It's just plain flowers, no baby's breath, etc., so Mr. Ernie will leave it alone. I need to get busy! Enjoy the rest of your day! :wave:
