A super quick check in for me...before we head to the sports show. I had to go into the office for a couple hours to finish a project, but soon DH will pick me up and then we'll be off to enjoy the fun day!

Hope you have a great weekend. I hate that we lose an hour this weekend. :( It's supposed to be super warm here. I have all the windows open. With the warmth comes the thunderstorms. I still want to wash the car today and get all the bird poop off. Then it's tackling the house work. I'm making a pledge to myself to stay off the computer and focus on the house this weekend. I did owe you a recipe
Kinda Like - Sweet Onion Chicken Teriyaki Sauce
Serve on sandwiches or as a salad dressing with vegetable garnish of your choice and the cooked deli style chopped chicken breast strips. Recipe makes 10 tablespoons each at 1 WW point. This is really sticky so be careful if you spill it. Stores well in the refrigerator. This recipe is a bit less sweet than it's famous sandwich shop counterpart and has more of the sweet / tang of the sugar and vinegars - you can always add more brown sugar or a bit of honey if you like it very sweet. It covers the greens well so you really don't need that much and 1 tablespoon does goe a long way. Ingredients: 1/2 cup light corn syrup 1 tablespoon minced / finely diced fresh red onion (white will do but red is milder and more on the sweet side) 1 tablespoon red wine vinegar 2 teaspoons white distilled vinegar 1 teaspoon balsamic vinegar 1 teaspoon brown sugar or honey 1 teaspoon dry buttermilk powder 1/4 teaspoon fresh lemon juice 1/8 teaspoon poppy seeds 1/8 teaspoon salt 1 pinch cracked black pepper 1 pinch garlic powder Directions: 1. Combine all ingredients in a small microwave safe bowl or 2 cup glass measuring cup. Stir well. 2. Heat mixture uncovered in the microwave for 1 to 1-1/2 minutes on high until mixture boils rapidly. Watch as this cooks because it will begin to foam up and can boil over which will make a very sticky mess. I cooked it for 30 seconds. Stirred. Cooked for 30 seconds again and stirred. I let it sit for a minute and then stirred again and cooked it the last 30 seconds. The mixture will thin out quite a bit after cooking and doubles in volume. 3. Whisk well and let cool off. Store the remainder in a container with a tight fitting lid (as you don't want this accidently spilling) in the refrigerator. It keeps well, if it gets old the sugars will start to crystalize. I measured out 10 equal tablespoons from the recipe if made as indicated above. Came out to 1 WW point per tablespoon as calculated from the WW recipe builder. Dried buttermilk powder is in the baking aisle near the powdered and condensed milk. I passed it by 3 times before I found it. The ingredients can get a bit pricey so either find some friends who like this and share the cost or find a friend who likes to cook and has all these vinegars on hand. The most expensive item was the buttermilk powder. Enjoy! :hungry: |

Good morning ladies,
We were supposed to get storms overnight but they must have blown past us. Still a chance today. It's gray and cloudy out. I'm already feeling the loss of that precious hour of time from daylight savings. I did stay up late last night/this morning as I have always wondered about the digital clocks on the time change. Sure enough, it went from 1:59 to 3:00 am. Now I know for sure. And my experiment made me tired this morning. I worked outside cleaning up in the yard with DH yesterday. It was nice to be outside. Still have all that inside stuff to do today and I also have some errands to run. It's not getting done sitting here so hello and enjoy your Sunday. |

I like Daylight Savings Time because of how nice it is to have the extra hour of daylight after work. I needed extra sleep today too. And I'm still tired. It's just a lazy, rainy, stay inside kind of Sunday here. I had to go into work for a few hours yesterday morning, then we went to the Sports Show - where we had a really fun time! Today, I went grocery shopping, and now I'm doing laundry and cooking (make and freeze meals). I'm running out of energy and just want to relax....luckily, I've got a pot roast in the crock pot for dinner tonight (and DH will do dishes - yay!). I guess it's getting colder because the rain sounds like it's turning to sleet or hail. We're supposed to get 2-4" of snow tonight....hopefully it will be closer to 2" or less and hopefully the roads won't be slick in the morning. I'm so tired of snow and cold. Mother Nature teased us last week with temps in the 50s and 60s. She's getting a good laugh today as she reminds us that winter's not over yet. Mel - So glad you had a nice birthday. The weekend was fantastic. We had a marvelous time in St. Louie... Little Ms. Olivia is so sweet and smiles all the time. Ate at a great BBQ place. Bandana's BBQ. Yummy! Blew a tire on the way home. Thank God Tony was driving at the time, altho I must say it blew because he hit a basement of a pothole on I70.. He felt really badly about it. I told him not to worry, we were all safe and stopped fairly quickly. Between Samantha's Chris and Tony they had the tire changed in about 8 minutes. They looked like a pit crew at a Nascar race. I stood back on the shoulder and cussed at the truckers that wouldn't get over in the other lane. Needless to say, I had to add $$ to the cuss bucket. Shu weee, I am still tired from the weekend and could of stayed in bed. I didn't roll out till 6 this morning and had to hustle to get ready and to work on time. I am usually up by 5. Let's see lost an hour in St. Louis as they are an hour behind in Indiana, lost an hour due to the clock set back change, and lost an hour this morning. Guess I am 3 hours behind in sleep. lol. Had a terrible sleep last night. It was freakin' 78 degrees for a high yesterday. Although that would be sweater weather for Miss Shad, it's kinda warm for this chick, particularly at night. I changed the clock last night to set the alarm earlier but forgot to actually turn on on the alarm. Woke up this morning in pitch black night - good thing I woke up on my own because I had to get out early for a doctor's appointment this morning. It was my annual physical. No orafice was left unchecked :o tho many of them protested :lol: I guess I am ok. So far. I told the doctor that my chest tightens up when I try and sprint or walk fast and hard. She wants me to see a cardiologist probably due to the fact that there are horrid heart issues on both sides of the family. They were nice enough to make an appointment for me, but they made it for Wednesday when I have to take DH for his cataract surgery. Other than than nothing's up. Weekend flew by. The waxwing birds were flocking all over the berry bushes. Must have been at least 30 of them. Back and forth up and down the driveway. I went out yesterday to go to the grocery store and the stinkers dive bombed my car totally. It was slightly less than a metal version of a guano pile. Very ewwwwwwww. I didn't have time to wash the car first, was quite embarrased to be driving it around town. Also had to drive it to the doctor's this way but will get it cleaned up this afternoon. Yikes on the tire Annie - good thing you were safe and sound. Those potholes are horrible. We even have them here. Thanks for the banana info but why aren't you supposed to put bananas in the refrigerator? Mel, I didn't really intend to stay up that late but I was up until 1:30 and figured I was this close, I might as well stay up 30 more minutes. Besides, I knew you wanted to know just as much as me :rofl: Sorry to hear the seniors spent the weekend "kissing the floor". Will send you some Sesame Street bandaids to make them feel better. :hug: Michelle - was always the worst this time of year to get teased with warm weather and then the cold decends again. Same here. It's unusually warm now but a cold front is coming and it will cool off tomorrow. It's nice enough now that you want to start planting but you have to remember, this is the teaser stuff and it can still get cold enough to freeze yet so we have to hold off. Make ahead and freeze is the best way to go, even if it seems like you waste a whole precious weekend day just cooking. Ceejay - did you find the source of the bad smell at work?
