Ok - y'all - I got ambitious tonight and made the Famed Taco Bake!!!!!! Let me just say it was a SMASHING success. My husband had to work until 7 pm tonight - but he just works in an office outside - and so I paged him up and told him I made dinner - and him and his little work phone were in here in about a minute flat! He was excited because I do not normally cook!! He did have to run off for five mins in the middle of dinner to answer his phone - lol - but he came right back - lol.

SO - my husband devoured it - I do not know how many bowls he ate. He's supposed to be doing SBD with me - but he's been off the beach since superbowl - not totally - but for sure not on the same beach as me!! So - he wanted to know if it went with corn chips - and I was like no - it goes with lettuce - lol. He was still happy though!

For the kids - the baby - I just put him some in a bowl with tortilla pieces with it - and gave him a spoon and he ate it - it was a little spicy - but he was ok with that - he just drank extra water - lol.

And the 3 year old with a cold - he did not eat much - but he did like it. He wrapped his in a tortilla like a burrito and ate a few bites!

Oh - and we topped it with yogurt that my hubby has been draining all the liquid out of - it makes a great substitute for sour cream!! I did top my first bowl with ranch dressing though - lol - it was pretty dang good.

Anyway - what a wonderful dinner! This is the most full I've been since I got to the beach!!

I put broccoli in it this week (chopped up very fine) and it was perfect! DH and I fight over who gets the last serving...I ate it this time and he pouted for an hour! Who knew a man could pout over diet food!

Glad you enjoyed it. I think the creators of that and the Taco Bake deserve huge medals and something like a coupon for a year's worth of free spa visits.

Good point about the yogurt cheese...interesting!

all this talk of an amazing recipe and NO recipe? And no link to where it's posted?

Granted, I'm not on SBD, but if it's this priaseworthy I sure owuld like to give it a try!

Heather, My DH is also on a sorta-kinda SBD. When I make this he uses it as a dip with his tortilla chips. What a Mean-Head! It doesn't really bother me because it's so good the way it is, at least!
