Ok - I am so proud of myself - I cooked dinner. That is not something I do normally - but it's something I STRIVE to do - but I'm just not usually successful!
SO - I had to share - I took the leftover pork loin from last night (DH made it - not me) - and there were like 4 slices left - and so I smeared Laughing Cow cheese on each piece and stuck it in the microwave.
I cut the ends off of a bunch of asparagus and let Hayden put it in a pan and then I gave him a basting brush and a little olive oil and got him to coat them with the oil - so that kept him busy. Then, I let him shake salt and use the pepper grinder - and put them in the oven - he was so proud - lol.
And I made green peas for the boys. James and I both hate them - but the kids love them. Hayden used to love them with cheese when he was little - but I had not made them in a long while and I fixed them last week and he stirred it around on his plate and frowned and then said - innocent as ever "Is this poop?" - I about fell out of my chair trying to stifle a laugh. SO - no cheese this time! Just salt and pepper and Smart Balance!
Then, for the boys I broiled two whole grain english muffin halves with cheese on top of them - but I skipped those for me and DH who are only at Phase 1 of the beach!
SO - I am so so proud because everyone ATE it!!!! WOOHOOO!!! Even the kids ate a healthy dinner that did not involve chicken nuggets!

I'm happy happy happy right now - and best of all - full. Although - I wish I'd of had DH and I a pound of asparagus each - because I topped it with parmesean cheese and it was to die for. I could have eaten the whole pan.
