) What kind of oil is in the dressing? Is it olive oil? Because that'll solidify slightly in the fridge. (yuck!)
Olive oil really is the best oil to use. I know it's a drag, but we usually make up just enough for what we need at the time. Or you could take it out of the fridge an hour or so before using it and give it a few good shakes...
