    I also LOVE potatoes, especially mashed. I make up indivual containers of the "cauliflower" recipe but I also mix in cooked spinach. Then I top it with some low fat mozzarella. They're great to pop in the microwave and I feel like I'm having my potatoes. It has been a lifesaver for me.
