? what to use in place of cornstarch as thickener?

  • I have a number of wonder ful soup recipes I can make in my vitamix blender that req a sm amount of corn starch or baked potato to thicken..

    Any suggestions on what I could use to place of the cornstartch ?... I know not the white potato

    I have 2 that we like one is a broccoli cheese an the other is cauliflower soup..
  • I sometimes use an egg yolk to thicken things or a mushroom puree. (Duxelles?) Chick peas or white beans work too and are simpler and faster.
  • I use white beans - sometimes though I find that if I puree a small portion of the soup itself, it thickens naturally (especially true with lentils).
  • I don't know if this would work like u want but I add quinoa to my soups.
  • I heard arrowroot is good for thickening
  • Ditto: arrowroot works.
  • Arrowroot is what is recommended in the SBD cookbook I have, but it's pretty expensive. I think you only have to use a little bit, though.
