coconut flour

  • can anyone tell me if coconut flour is allowed on the south beach diet

  • I've been searching the web, and can't find anything official. According to the live strong website, it says that it's suitable for low carb/low GI diets. I'm guessing it would fall under the phase 2 area, but am not positive. I just used it to make my daughter a wheat free birthday cake (combined with Almond Flour) that was excellent. It's better for you than white flour - at least we know that much!!
  • hi catmat i have just received my copy of the parties and holiday cookbook
    (i had all of the books when i did sb last time but lent them all to a friend and they were never returned so having to buy new) anyway in there , there are 2 recipes using shredded coconut and as the flour is just the same thing ground i think it is okay, as long as you don't use too much like the would use ground almonds. i have a book of cupcake recipes that use coconut or almond flour and agave syrup so i think would be sb ok, you only use 1/2 cup to make 9 cupcakes so there would not be a lot in each cake
