Sounds good to me, too. Kind of like a veggie omelet.
My only concern is what's in your mixed veggie mixture? The common mixed veggie mix has corn, peas, carrots, and sometimes potato. These are all Phase 2 ingredients and should be avoided in Phase 1.
Oh thanks, yes noticed that, my usual veg mix is full of peas and carrots. I decided to use spinach and tomatoes this morning instead.
I've read through the book and just dont feel very confident that Im embarking about it the right way. The recipes look lovely but they are generally for four people or so and I live on my own!
Esmee, I know what you mean about needing recipes for one. I have a family but I need to make things I can take to work for lunch and when I make an entire recipes I might have to eat the same lunch all week! Yuck.
