I'm a broccoli fiend and got carried away last night. Added an extra half bag of broccoli so we had cheesy broccoli puree. Luckily DW loves broccoli too :)

I'm off to scout crockpot recipes for tonight's dinner.

Tonight we had the Very Veggie White Chili. :drool: I forgot how good this is. It's nothing like chili but it's really good. I used amaranth instead of quinoa and cut it in half, also added a little cumin. I roasted beets and a sweet potato on the side. Just right for a cold day with too much shoveling.

The soup was A+. I left some of the beans in it whole and added ham to Lou's and some chicken to mine. My wheels are turning in my head to make some other varieties with, maybe, lentils! TY for posting this one. :mouse:

Tonight I'm making palak daal. My favorite discount food store had the white lentils awhile back and I couldn't resist them. So far this is the only recipe I've found for them. Luckily we like it :)

I'm making a chicken enchilada casserole that is suitable for Phase 2, and I'm planning to post the recipe later or tomorrow. For those counting points while doing SB it comes out to 8 pts. per serving.

Last night I made a quick dinner - sauteed half a huge eggplant with spices, added sausage Gimme Lean, artichoke hearts, and NSA sauce. I had mine over 1 measured serving of brown rice pasta (love the stuff but could definitely overeat it).

Tonight it's my own version of a crockpot cassoulet - baby lima beans, lots of veggies, French spices, and veggie sausages and chik*n cutlets. We will have brown rice and sauteed greens on the side.

I'm going to make a crock pot black bean soup for my lunches this week, and I think I'll start a second crock with the salsa chicken for dinner tonight. I've made this before and we didn't like it, but everyone here loves it and I think I just didn't make it right, so second try and I'll watch it this time so it doesn't cook too long.

I've had lots of ups and downs with bean burger recipes. This recipe recently posted is excellent. The burgers hold together really well, not filled with bread crumbs, and lots of flexibility. I made black bean spinach burgers tonight. I'm already imagining different variations ahead!

I think I'm the only one who still loves this thread :) It helps me stay creative with dinners when I see what everyone else is making.

I realized yesterday that I haven't been making any of the foods we ate all the time last winter. I just forgot about them over the summer! So tonight I'm resurrecting the African Inspired Lentil Stew. :drool: I'm glad I remembered it before the weather changed!

OK, Cyndi, I've heard you mention this stew several times now and how much you liked it, so I just made a crockpot full of it for tonight's supper. I took Schmoodle's advice, though, and reduced the amount of liquid in it since I want a thicker stew.
I'll report back and let you know how we liked it. :)

Oh no - the dinner threads are my favorite! I just haven't had anything good to add recently.

I made the Very Veggie White Chili recently. You noted earlier that it was nothing like chili, and I agree - esp. without the quinoa (which I omitted for Phase 1), it was very much like cabbage soup with beans. I tried to model the recipe on many chicken white chili recipes out there, but making it vegetarian and boosting up the nutrition. I haven't really had other white chili recipes... are they more like chili? How could the VVWC recipe be tweaked to be more like that? Pureeing some of the beans? Cooking it even longer? Adding arrowroot powder or something else?

I welcome any suggestions.

Tonight, DH's favorite, pork tenderloin stuffed with roasted red peppers, spinach, parmesan, roasted asparagus, and an off-plan starch for him and the kids, not for me.

I haven't made that stew in a long time. I think I'll make some tomorrow, for my lunches this week.

Matilda, OMG, I bought and tried TJ's seaweed and with the first bite knew it wasn't going to happen. LOL, smelled just like fresh seaweed to me. Even though I know they are supposed to be super good health wise, just couldn't do it so gave them to my GD who just loves them. Go figure. I do, however, really like TJ's roasted green beans as a snack every once in a while.

Just bought 2 packages of these. Um, I can't stomach them and neither can my hubby. Blech! I'm gonna try and take one back if they'll let me return the unopened one.
