Warm Winter Dinners
I'm getting back on track here so tonight it's a phase 1 dinner, What a Dal and eggplant spinach curry
|

I'm making a dish tonight with leftover steak; found the recipe online. Simmers for a couple of hours. Tomorrow night is soup with the ham bone and beans. |
Today was Trader Joe's so I have a bag of the mixed greens  I'm going to make them crack slaw style with some baked tofu mixed in
|
I miss this thread, some of my best ideas come from here.
Tonight I made Moroccan Lentil and Chickpea Soup in the crockpot. It was really good and really spicy (2T of the harissa might have been a bit much ;) ) When my head isn't so funky I'll post the recipe. Our crockpot section has been quiet for awhile. |
Cyndi - do you know you can freeze those bags of greens from TJ's? Unless you were serving them raw in a salad they cook up just the same from frozen as they do from fresh. I love to stock my freezer with them so I always have a good veggie on hand.
Also - have you tried the new TJ's roasted seaweed snacks? (sorry to hijack this thread). They are .99 per package which it says contains 2 servings, I just eat the whole thing. Only 1 point! Satisfies a salty craving too. |
CindyM - Moroccan Lentil and Chickpea Soup in the crockpot??!! Please please post when you do get a chance!
|
I'll have to loook for the TJ seeweed next time I'm by there. Haven't tried it yet but do like their lightly salted crunchy green beans as an occasional snack.
|
We're having a lightened version of chicken marsala. I've been craving comfort food lately and this should hit the spot. i've made it before per the recipe and think i will replace the white flour with all whole wheat flour this time. it's so tasty!
http://www.womenshealthmag.com/nutrition/chicken-recipe we're having steamed string beans and garlic spinach on the side. |
Kalyn's Pressure Cooker Vegetable Soup with Giant White Beans and Bay Leaves (I use regular white beans) with ww bread sticks and spinach salad.
I found a new ww pizza dough at our grocery store this week. We aren't into home made pizza, but it makes really good breadsticks. I experimented on Sunday (sprayed them with a little olive oil Pam and sprinkled Mrs. Dash and Parmesan cheese on them before baking) and Fergie's been talking about them ever since. I sure hope Hannaford keeps carrying this dough, I'd never heard of the brand before. I can live without bread, but when I fix it/serve it I like being able to have a little if I want it. I drool through the whole meal when I fix him Pillsbury crescent rolls...... |
I am making the Black Bean and Sweet Potato Soup with Lime thanks to Cottage's recommendation. It's cooking right now and smells amazing. We will have sauteed mustard greens on the side
|
Ooooh, Cyndi, that soup is SO good! Let me know what you think. :)
|
Wow, it's really good. Thanks for the tip. This will be a regular in our winter rotation.
|
I want to try that one too! Last night I made Catherine's Spicy Chicken Soup again. It freezes well and is husband-approved:)
|
It's definitely soup weather. Tonight I'm making one of my favorite cold weather comfort soups, the Broccoli, white bean & cheddar soup. The beans give it the body of a cream soup with extra added fiber and nutrients. Yum
I'm sure the crockpot will be running tomorrow. |
Going to try Broccoli, white bean & cheddar soup and tweak it for us. Sounds great. Going to look at your other links, too.
|
I'm a broccoli fiend and got carried away last night. Added an extra half bag of broccoli so we had cheesy broccoli puree. Luckily DW loves broccoli too :)
I'm off to scout crockpot recipes for tonight's dinner. |
Tonight we had the Very Veggie White Chili. I forgot how good this is. It's nothing like chili but it's really good. I used amaranth instead of quinoa and cut it in half, also added a little cumin. I roasted beets and a sweet potato on the side. Just right for a cold day with too much shoveling.
|
The soup was A+. I left some of the beans in it whole and added ham to Lou's and some chicken to mine. My wheels are turning in my head to make some other varieties with, maybe, lentils! TY for posting this one. :mouse:
|
Tonight I'm making palak daal. My favorite discount food store had the white lentils awhile back and I couldn't resist them. So far this is the only recipe I've found for them. Luckily we like it :)
|
I'm making a chicken enchilada casserole that is suitable for Phase 2, and I'm planning to post the recipe later or tomorrow. For those counting points while doing SB it comes out to 8 pts. per serving.
|
Last night I made a quick dinner - sauteed half a huge eggplant with spices, added sausage Gimme Lean, artichoke hearts, and NSA sauce. I had mine over 1 measured serving of brown rice pasta (love the stuff but could definitely overeat it).
Tonight it's my own version of a crockpot cassoulet - baby lima beans, lots of veggies, French spices, and veggie sausages and chik*n cutlets. We will have brown rice and sauteed greens on the side. |
I'm going to make a crock pot black bean soup for my lunches this week, and I think I'll start a second crock with the salsa chicken for dinner tonight. I've made this before and we didn't like it, but everyone here loves it and I think I just didn't make it right, so second try and I'll watch it this time so it doesn't cook too long.
|
I've had lots of ups and downs with bean burger recipes. This recipe recently posted is excellent. The burgers hold together really well, not filled with bread crumbs, and lots of flexibility. I made black bean spinach burgers tonight. I'm already imagining different variations ahead!
|
I think I'm the only one who still loves this thread :) It helps me stay creative with dinners when I see what everyone else is making.
I realized yesterday that I haven't been making any of the foods we ate all the time last winter. I just forgot about them over the summer! So tonight I'm resurrecting the African Inspired Lentil Stew. I'm glad I remembered it before the weather changed! |
OK, Cyndi, I've heard you mention this stew several times now and how much you liked it, so I just made a crockpot full of it for tonight's supper. I took Schmoodle's advice, though, and reduced the amount of liquid in it since I want a thicker stew.
I'll report back and let you know how we liked it. :) |

I made the Very Veggie White Chili recently. You noted earlier that it was nothing like chili, and I agree - esp. without the quinoa (which I omitted for Phase 1), it was very much like cabbage soup with beans. I tried to model the recipe on many chicken white chili recipes out there, but making it vegetarian and boosting up the nutrition. I haven't really had other white chili recipes... are they more like chili? How could the VVWC recipe be tweaked to be more like that? Pureeing some of the beans? Cooking it even longer? Adding arrowroot powder or something else? I welcome any suggestions. |
Tonight, DH's favorite, pork tenderloin stuffed with roasted red peppers, spinach, parmesan, roasted asparagus, and an off-plan starch for him and the kids, not for me.
I haven't made that stew in a long time. I think I'll make some tomorrow, for my lunches this week. |
Matilda, OMG, I bought and tried TJ's seaweed and with the first bite knew it wasn't going to happen. LOL, smelled just like fresh seaweed to me. Even though I know they are supposed to be super good health wise, just couldn't do it so gave them to my GD who just loves them. Go figure. I do, however, really like TJ's roasted green beans as a snack every once in a while.
