As long as your bread is 100% whole wheat, it's fine. But remember, no bread, fruit or other grains until Phase 2.
Although we do watch our fat grams on this plan, we mostly concentrate on avoiding sugars, white flour, white pasta, white rice, and any refined, processed foods. Carbs are fine, as long as they are healthy carbs.
