Default Sweet mock cornbread?

Has anyone tried modifying the mock cornbread to make it a coffeecake-type dish? I think I am going to try that this morning - maybe add some cinnamon? I might add some pumpkin, too. Hmmm.....

I will answer my own post, since you sleepyheads are all still in bed.

This morning our church, Sunday School, and AWANA got cancelled and the roads were too bad to drive on so we were stuck inside. I decided to do a nice brunch for the family since we hardly ever get to sit and eat breakfast together. I make the kids a hot breakfast before school but Tom is usually gone to work, Connor eats first because he has to be at school earlier than the girls, and I wait until after I work out. So here was a perfect chance to sit down for a nice breakfast together. I made a spinach and mushroom frittata, cut up some grapefruit, and modified the mock cornbread recipe to be like a coffee cake. Everybody liked it, and all but one tiny piece was gobbled up! Here's what I did, in case anyone else wants to try:

1 can great northern beans, drained and rinsed
4 eggs
1 t baking powder
1 t salt
1 T cinnamon (could have used more even)
sprinkle of cloves
1/4 c agave nectar
1/4 c milled flax seed
2 T canola oil
a handful of raisins

I cooked it at 200*C (400*F) for 30 minutes.

That sounds interesting, Kara.
I made cornbread yesterday to go with my soup, and while I was eating it, I was thinking about how I could play with the recipe to come up with a yellow or chocolate cake, such as adding vanilla extract, cocoa powder, and maybe even some expresso powder to it. I'll have to try your coffee cake idea some time.

That was nice that you all were able to sit down together for a Sunday brunch. Enjoy your snow day!

Oh, Linda, I like your idea! You could even do an icing with some sweetened cream cheese! Sounds like a good birthday treat!

Just what I was looking for Kara! I as thinking about trying the Bean muffins but trying to figure out the sweetener piece. Maybe I'll make muffins using your modification. I'm thinking maybe banana or pumpkin nut. I'll let you know if I do and if it works.

I'm glad to see the great minds are at work on this one. I haven't tried it yet, but going to make the casserole tonight. I'm not going to tell the kids it's not real cornbread, we'll see how it goes.
