Good morning - today I officially start Weed of Phase 1. Last week was rough, but I'm feeling a little better about things this week. I'm looking at the recipes to get some ideas of things to eat for breakfast beyond eggs! I'm a bit rushed in the morning, so some of the make aheads sound great.
My biggest challenge is not the food, but getting to the gym - I never seem time to fit it in, and I really infuriates me because I pay for a monthly membership that I never use. I'd like to figure out some sort of plan to go at least three times a week, so any advice would be really helpful. My gym is only 5 minutes from my house, but between getting to work early, often working late, and walking the dog, the only time I seem to have left during the week is time to cook, straighten the house and rest. Ugghh.
On another note, though, I have lost 4 lbs this week. Yay for that!

Have you thought about getting up early and hitting the gym then? I struggled with the idea at first but now I love my special quiet workout time in the morning. I know you said you get to work early, but it might be worth it to try to get your exercise in before that.
I am not a good one to offer gym advice because I don't have a job to get in my way. But I will say, even with that, it took me a long time to build a good habit of going. One thing that helped was become friendly with women there (my first gym was ladies only). They would ask me where I had been if I missed and made it a nice place when I saw smiling faces. Not sure that will help much though with time issues.
I did want to post though, mainly to congratulate you on your week!
What helped me get moving yesterday was having some cashews and postponing my dinner (and homework). But cooking ahead helps too. If you can nook some leftovers, you can squeeze that hour in. Or, eat a lighter dinner and maybe go to the gym and just cycle?
