What's for dinner 10/13 - 10/19
 
Hello ladies......hope you're finding some fantastic things to make for dinner this week that are warm and toasty!!!

Today we're having the famous TACO BAKE. I'm also going to make a big green salad and whip up some of Kim's Cilantro Lime dressing.

For dessert this week I found a recipe for Pumpkin Pecan bread w/ Orange Cream Cheese frosting. Yummy!!!!!

I had like 2 cups of spaghetti (with organic spaghetti sauce).. it was pretty good.

Heather... can you PLEASE share your pumpkin bread recipe?!?! LOVE all things pumpkin!!

Tonight we had fat free all beef hot dogs with a huge salad. We were rushed tonight... best I could do! Tomorrow we are having chili with extra beans!

Got home really late, so I heated up some FF refried beans with RF grated Mexican cheese on top. Threw some lettuce and salsa on it and Voila! It was great!

Jen - I actually found it here in the Phase 2 dessert section. It turned out really yummy and moist. I highly recommend it.

Tonight we're having Egyptian Red Snapper in Red Pepper Mint Sauce, WW Couscous, & Green Salad. It's a new recipe that I found at Recipezaar.com. If it's any good I'll post it.

Hi all, tonight I'm going to have Old Bay Tilapia, broccoli and milk. :)

I'm trying to find something to make for the week... I usually make one dish and alternate it with say chicken or tilapia. I had made stuffed peppers on Sunday, but because I was busy working all day yesterday I finished it off, had two yesterday (one for breakfast and the other for dinner) and had the last one for breakfast this am!

Tonight I am having Broccoli salad (from Costco) and will probably add some shrimp to it.

I just went grocery shopping and bought a ton of ingredients for Taco Bake. I can eat that everyday and never get sick of it!

Tonight is london broil, spinach and corn on the cob from a farm out east on the island. The corn was mucho expensive but it is the best I've ever had.

I am indulging tonight with sesame tofu- I will skip the rice but the recipe calls for honey that I normally wouldn't eat! YUM.

Last night we had baked rotini and a big salad. Tonight, I think we're going to have either apple chicken with white wine sauce or chicken and roasted autumn vegetables in the crock pot. I guess I better get cracking if I'm going to do the crock pot dish :)

chicken kabobs alternated with orange pepper and onion slices cooked on the grill, greek village salad. Dh made a ceasar salad out of it tonight. I bought that SBD ceasar salad dressing but am happy with the kabobs staight up for now. I look forward to branching out and learning and creating more recipes with you all as I progess in theplan. I only took a few quick peeks into the recipes thus far during my initial phase ;).

Making a SBD friendly version of Shepard's Pie! (Cauliflower mashed taters, veggies mixed and cooked with extra lean ground beef and veggie stick used to make a sauce). It's yummy!

I picked up a lovely spaghetti squash yesterday and will serve it with veggies sauteed in evoo and some really good parmigiana cheese and veggie sausage.

I'm having a craving for greek food, so I'm making taboulleh, and greek lamb patties with tzatziki sauce in a pita. DH wants a tomato/onion salad as well.

Also, Hmac, the pumpkin bread is in the oven and smells absolutely divine.

I have not a clue.

I think baked chicken nuggets for the kids (real ones, not those nasty processed thingees!!), with their fresh veggies.

I'm thinking of making a second pot of my lentil and smoked sausage soup for the hubbie and I!!

Heather - the bread was fantastic. Absolutely wonderful. Super moist! DH is usually not a fan of cream cheese but really liked the orange cream cheese with this. I need to go buy more pumpkin, as I'm going to be making another batch or two to keep in the freezer. DH ate most of it yesterday. :) Thanks for the recipe.

Tonight, we're going out for a birthday dinner...I'll probably have corn and crab bisque and a big salad. I thought of having a bit of wine, but I had a few sips of DH's at the book study and it made me totally tipsy....I think I'll just save it for after the pregnancy.

Dinner tonight was chicken tortilla soup. Or that is what we call it. Chicken with veggies and tomatoes with chilies. Kids had chicken "nuggets".

spaghetti squash with peppers, mushrooms, shallots and 3 tiny eggplant from our garden, sauteed daikon greens (I am not a fan but apparently they are really good for blood sugar), and my new absolutely favorite dessert -
really thick greek yogurt (made from scratch), 1 T peanut butter, a little cocoa powder and agave. I swear it tastes like a really rich, decadent mousse. I can't believe I can eat it!

Jen - I'm having a hard time not making all the recent desserts at once....

Cyndi - I found the coolest thing at Target yesterday - pre-chopped frozen shallots. Sprinkle in whatever dish you are making and voila...no chopping. Shallots are hard to find around here sometimes and this will come in handy.

I had corn and crab bisque with a salad...I forgot to ask for dressing on the side and there was too much. I ended up stealing some of DH's lettuce and adding it to sop up the dressing. The bisque was great, but too much! I have a nice lunch for tomorrow :)

tonight ended up being guacamole salad with a side of refried beans from our friday night mexican restaurant... it was ok... wish I woulda ate at home tho!
