Default What's For Dinner 9/8 - 9/14

Thought this might have be started by now...but I guess you all were just waiting for me Thanks!!!

Tonight we're having Tex-Mex style stuffed peppers w/ turkey, lentils, olives, and such. I'll probably also make a pot of black beans and a green salad.

For dessert this week we're having vanilla lime yogurt pie.

We're having the Vietnamese Pork Rolls from the Quick & Easy cookbook. We skip the Boston lettuce and just serve it over the napa cabbage. Yum!

Heather - First, thanks for starting us off. This seems to be your thread and I felt guilty starting it last week! Second, could I get the recipe to that lime yogurt pie? That sounds absolutely heavenly!

Tonight....I cannot decide whether to have leftovers....AGAIN...or to actually make something. As much as I would love to cook, we need to eat these leftovers!

If I do cook, we'll be having chicken stroganoff, probably some broccoli and a salad on the side.

LOL, nothing tonight for me, had enough today earlier and the past weekend.. gained 6lbs of water weight.. need to go to Phase 1 again I think.

We ended up having chicken picatta with steamed sweet potatoes and broccoli last night.

DH wants enchilada casserole tonight. I'll probably serve it with fresh bread and brussels sprouts.

Zeff - the pie is easy (from the breakfast - P1 thread).
1 32 oz. container of s/f f/f vanilla yogurt
1 package s/f jello (8 servings)

Mix the two together. Microwave on high in 30 sec. increments until the gelatin is dissolved. Pour into a pie tin sprayed with non-stick. Chill to set for 3 hours. Really yummy and tangy. I put a dab of whipped cream (from the can) to top it off.

Going out, so I don't know what we're eating.

Tonight I AM making the Taco Bake! Can't wait! I'll have a side salad, cause if I don't I can eat WAY too much of the bake! . I haven't made it in three weeks or so, shame on me! hahahah. Told my son I'm making it and he's on his way over tonight! UM< Joe, I want LEFT OVERS!!!!!!!!!!!!! He said so did he, he'll bring the pan home! I think NOT!

Jelly, I used to do that too, and to be honest it doesn't work, not eating, eating way too much and then doing P1 again? Get yourself a plan and stick to it! you'll find yourself balanced better and lose the weight!

Last night ended up being a ww tortilla with black beans and cheese, ok- so it was a quesadilla! lol. I ate it with taco bell mild sauce and sour cream.
Back to not adding ww pasta and other stuff and I am limiting to 1 ww tortilla(small) a day in for now... not totally reverting to P1 but I have been eating too much of the "ok" stuff, which in turn is not OK!

So, Breakfast this morning was 1 egg, 2c spinach sauteed down to like .25c! man that stuff shrinks! and veggie bologna.

Lunch will be stirfry with eggplant, tomatoes, bell peppers, shirataki noodles

EDIT: ended up being some canned veggies I had inthe cabinet for like a year because I cut the eggplant and it was brown inside- weird, I have never seen that before and I have eaten a LOT of eggplant! anywho- still had the zuchinni and shirataki with a nice spicy peanut sauce... I cannot imagine EVER buying these lachoy canned veggies again- the sodium in them is rediculous! thats probably why they were in the cabinet for well, lets be honest here, maybe 2 years! I didn't even have to add any soy sauce! I was scared to!

Dinner will be a LARGE taco salad made with black beans, black olives, sour cream, no cheese, lettuce, tomato, and maybe crumbles if I am feeling like it!

Hope yall don't mind me posting my menu for the day- but this will help me keep on track too

We had totally-legal for SBD stuffed peppers last night and they were awesome. I made them with whole wheat couscous instead of rice, and I love the nutty taste it gave them. That will be dinner again tonight!

Have a little "stomach upset thing" going on for the past two days. Not hungry at all. Might end up with some yogurt, or something equally as bland...
