My new favorite dinner is turkey meatballs in chunky crushed tomatoes which i just season a little bit and then put under the broiler and melt some mozzarella on top. Sometimes I put some ricotta in as well. So yummy. Cauliflower on the side tonight.

Another late work night so it's the same dinner I had yesterday - the baked oatmeal recipe with apples & hazelnuts topped with agave sweetened greek yogurt. yumm

last night was baked pesto chicken from the Quick & Easy cookbook.

Tonight's is Halibut with Tapenade from the Quick & Easy cookbook.

I'm making an apple baked ww pancake this morning for breakfast and tonight for dinner is chicken stroganoff.

I know I've been saying I was going to make this forever...but the stars just never aligned correctly, I guess. Tonight is the night!

dh said something about making a chicken pizza - all i know is it better be phase 1 friendly

Having the in-laws over for dinner. It'll be London Broil on the grill, Veggie Kabobs (peppers, mushrooms, eggplant, onion, zucchini), Big Green Salad, and I may stop by the store and pick up a WW artisan loaf of bread. Should be yummy!!!

B: 2 eggs, veggie bologna
S: lf string cheese
L: salad with black beans
S: hummus on cuke chips
D: pizza made on a ww tortilla with lots of veggies and a big salad

I take a ww tortilla and bake it a while till crispy then top with sf pizza sauce, loads of veggies and maybe some veggie meat, top with mozzarella, then bake till bubbly! YUM :)

I think tonight will be chicken parm. Made with parmasan cheese as the crust.. and I'll make the sauce myself from fresh herbs and tomatoes out of my garden :D. With a salad instead of pasta.

tonight is going to be beef kabobs, brocolli and tossed salad. have no idea what dessert will be yet.

So, I'm actually in the process of making chicken stroganoff...man, I'm proud of myself. I think I've been saying I'm going to make this for 2 weeks or so.

We're having roasted brussels sprouts and a wilted spinach salad on the side.

Dinner will be roasted tomatoes w/ shrimp and basil, WW pasta, and a big green salad.

tonight dh is making a taco salad (lettuce, tomatom refried beans, black beans, chicken & salsa as dressing) since I have a movie date with a good friend of mine

CSA night (only a few more of those :(
balsamic roasted turnips, sauteed kale & eggplant burgers

I'm also the proud holder of 8 lbs of san marzano tomatoes. ANyone ever tried slow roasting? I'm thinking of trying some because I keep hearing good things about them. The rest will go in the dryer, of course :)

Tonight was a function with the math department - a picnic of sorts. Pizza, po-boys, fried chicken...all the usual crap.

They had salad, thankfully and I stuffed myself on that........and a teensy slice of veggie pizza ;)

taco salad and sweet potato "fries". I swear I eat taco salad so much I should be sick of it by now~!
