Default I'm joining a CSA-what about beets?

I don't remember off hand if beets are a SBD friendly food or not. I've heard people talking about receiving a lot of beets from their CSA share (community based agriculture)

And what do you do with them? I've only ever seen them canned - or pickeled-double yuck.

beets are considered high on the GI which means they are a limited food in phases 2 and 3. i only buy them canned for DH and girl child.

Fresh beets roasted in the oven with a little bit of balsamic vinegar are awesome. So naturally sweet! Especially the candy stripes and golden.

They are also good shredded on salads and the GI is better when raw (like carrots)
