And more beans! I do best when my diet is primarily high density veggies with beans every day. Like Twynn I try to fill most of my plate with veggies with a small serving size space for my lean protein (usually one veggie burger or other non-meat protein).
Thanks so much everyone for your tips! I was so excited to get to my work desk today so I could check my computer and hear what everyone had to say. You ladies are great and your advice and support is what keeps me from fallin off the wagon.
I'm convinced now that I need to make some other adjustments, and add in more veggies. Looking back ( i ate much more veggies probably during phase 1, and I did drink a v8 almost every morning to jumpstart my day. I even took the time to make "cauliflower mashed potatoes", and ate more salads. I think once I left phase 1, I had become a little bored with my foods. (especially salads). With the onset of phase 2, i believe I probably did start cutting back veggies w/o really realizing it. I think since we were allowed a grain, or sugar free pudding, etc. for example-I might eat that before dinner and when dinner time came was full, so would be satisfied with having some meat and skip out on the veggie.
I also realize I should probably not eat so much protein because there are much more calories. I think sometimes, in my mind I revert to the Atkins way w/o trying. (if you recall, I had done atkins in the past-and basically since the food is much more limited than on SB, you wind up, (at least I did) eating much more protein basically with meats,(you can't eat beans).
With regard to dairy, my dairy consumption may consist of a sugar free pudding, but that is about it. Maybe I messed this up-
are we suppose to be having a certain amount of dairy each day?
Also, to be clear, how many servings should we be having each day of veggies? According to the new "supercharge SB" book, have the number of servings increased?
Is it okay to drink 1-2 small cans of V8 each day, or is that too much salt?
Sorry about all the questions, you are all just so very helpful to me.
Also, i wanted confess that I haven't been keeping food logs (which is a great idea and what I will start doing). Basically, I just having been keeping logs in my head and at the end of everyday, I would look back and go through in my mind what I ate all day and I can recall everything. However, if I would've written everything down, then I could have shared this info with you, so I will begin doing this.

I would say cut down on the V8 and have more fresh vegetables.
limit the v8 to one small can a day
dairy is milk or yogurt 2-3 cups a day (not that i get that much myself)
veggies are still 4.5 cups a day (1/2 cup at breakfast, 2 cups each at lunch and dinner AND THAT IS THE MINIMUM... you can have more)
pudding is a sweet treat not dairy.
and keep a food log. it helps.
