  • Yum! The only kind for me is the one I pick in my own garden. I love them! I make salsa and chili sauce and also can lots for the winter. (Just did a garden inspection and this may be the year for green tomato mincemeat unless things hurry up!)

Cherry tomatoes roasted with pesto and ww croutons is just yummy. I also do an Italian thingie with tomatoes, eggs, eggplant and peppers with onion and garlic of course. Looks terrible but tastes great.

    And then there's gazpacho!
  • I'm a bruschetta girl. I tend to eat them with cracked pepper and olive oil triscuits, but you can put it on toasted whole wheat bread, salads, whatever.

    Easy Bruschetta

3-4 Large Tomatoes, chopped (or 1 large can diced tomatoes)
    3-4 T. 2% Shredded Italian Cheese Blend
    1-2 t. extra-virgin olive oil
    1 large garlic clove, pressed
    green onion, chopped
    fresh basil (or dried)
    salt
    pepper
  • bread, mayo, very thick fresh tomato slices, salt...I usually eat it standing over the kitchen sink because the tomato juices will run down my arms, that is my absolute favorite.
BUT, I haven't met a tomato I didn't like, in salads, picos, roasted, sauces etc.
One of my co-workers made a greek bread salad for mother's day and it was divine with the fresh tomatoes, feta, grilled bread, onions, etc.
  • Count me in the Italian crowd. We go through several cases every winter and eat as many fresh as we can get.
Tomato salad with evoo, garlic and fresh basil is our favorite. Julie has hers on fresh buffalo mozzarella. I'm resisting that this year.

I'm also making "sun dried" tomatoes in the dehydrator.
  • Zeffryn,

Was going to say with Mayo. Also I eat grape tomatoes with Italian dressing. So yummy.
  • I grew up in central NY and I've definitely eaten my share of tomatoes with mayo, or stuffed with tuna
