Time to start the weekly dinner thread.
Tonight I'm having the eggplant casserole w/ a big green salad. I've been wanting to try it for a while, but I knew dh wouldn't go for it. But since he's out of town tonight......it ON!!!!! :D

Whole-wheat cheese tortellini with spinach-basil pesto, handful of grape tomatoes on top. Green salad of some sort. Glass of syrah.

I haven't had pasta at all since changing the way I eat, so I'm kind of overly excited about this meal. (I really hope the pesto turns out tasty enough to please my husband.)

A large green salad from my garden plus a lean pork chop done on the BBQ with a skewer of veggies. I adore veggies done on the Barbie!

Chicken coconut curry with lots of peppers, onions, carrots, peapods, cauliflower and cilantro. I have some brown basmati cooking as we speak for a side. I can't wait!

I also need to steam some broccoli as we have a whole bunch in the crisper that is about to go bad.

Hope I can get some ideas here for tonight, no plan, eek. It's just me and DH and DD2 though. I picked up some really nice lump crabmeat at the beach and could do some crabcakes, but we ate lots of crabs over the weekend, and DD isn't a big fan.
I've got eggs, zukes, and cheese, so maybe an omelet and salad.

WarMaiden, I used to cook tons of pasta, and now I just make it occasionally. It's funny how my family gets so excited when they see spaghetti and meatballs now, they don't care a bit that it's whole wheat.

Probably Almond Crusted Chicken Parmesan with Spaghetti Squash Marinara. If hubs isn't in the mood for Italian, then we'll probably have meatloaf with broccoli and green beans. (We're still on Phase 1).

As a side note, when people ask what you're having, do you ever feel like those Lean Cuisine (?) commercials where the lady describes this delicious gourmet meal and people are shocked to find out she can eat that and lose weight? lol

I'm trying the calabacitas recipe from Kalyn's Kitchen with a mix of green & yellow squash. Maybe some refried beans, taco mix & salsa on the side.

Supper tonight is artichoke (I've never had it before so we will see how this turns out) a salad and grilled elk chops. It's so hot out you almost don't need to turn on the grill, just throw the chops on and let the AZ heat do the rest.

I tried a recipe over the weekend out of a SB Cookbook I took out at the library. Cucumber's/radishes/red onion/feta cheese with a little olive oil/red wine vinegar S&P. It was not bad, good for a break from a standard salad.

Tonight we're having Grilled Salmon Steaks with Tangy Cucumber Sauce, Steamed Broccoli, & Green Salad.

Dessert will be what I had last night, but it was REALLY GOOD: Peaches & Blueberries w/ vanilla yogurt & a cookie (SBD friendly) crumbled on top. YUMMY!!!

I won't be getting home until late, so Jake is fending for himself and I'll make myself a big salad with goat cheese, pistachios, apricots and sf dried cranberries when I get home.

I'm having a big chopped salad with peppers, tomatoes, turkey breast, arugala, red onion, cukes and some nice olive oil/balsamic/cumin spiced dressing.

Today will be chopped up turkey cutlets in marinara sauce and pasta and a big old salad with tomatoes and squash from the garden...it may be tomato overkill, but we gotta eat em today!

Cottage – where do you find SF dried cranberries? I’ve looked at typical grocery stores in my area in the past with no success.

"Eden" brand carries a line of dried fruits sweetened with apple juice. I've found them in most grocery stores in my area, in the natural foods section. I have the managers of two Trader Joe's in my area scouring around to find a sugar free brand to start carrying, too.
I hope your salad recipe turns out as good as it sounds!

Last night we ended up having crabmeat omelets and sauteed zucchini with salad. It was sooo good.
I have no idea for tonight because I haven't been to the store since we got back. DH had to go out to pick up his meds and I told him since it was his last home-cooked meal for a few months to pick up whatever he wanted - he'll probably get steaks.

It's very interesting to me that I generally don't eat grains at dinner anymore, even though I could. I guess South Beach has kind of changed my mind about grains being a must item.

sweet potato/black bean burritos on ww tortillas with a little cheddar, red onion, and cilantro.

They are my favorite lately. A recipe makes enough for two meals for all three of us. My mouth is watering just thinking about them. mmmmmm.

DH said he wanted a salad on the side, so I sent him to the store to get salad ingredients. He's pretty good at it, so I'm sure he'll get peppers, avocado, onions, tomatos, cukes and some sort of lettuce.

War Maiden - I agree completely in regards to grains for dinner. I'll usually have rice or pasta once a week for dinner to make dh happy, but I rarely "need" them anymore. Feels really good!

After a bit of a struggle from lack of going to the store, I finally went to the store tonight. I had a whole wheat bagel with LF chive n onion cream cheese and a bowl of "taco" vegetable soup (minus meat.) I'd planned on having a salad as well but I'm quite satisfied now so I think I'll save that for tomorrow.

Boy oh boy do some of your dinners sound good. Wish I'd gotten grape tomatoes at the store!

Tonight I'm making Rachael Ray's "Black Bean Stoup." Here's the recipe:

Black Bean "Stoup"

2 tablespoons extra-virgin olive oil, 2 turns of the pan
1 sprig fresh bay leaves or 1 large dried bay leaf
1 jalapeno pepper, seeded and chopped
4 cloves garlic, chopped
3 ribs celery with greens, chopped
1 large onion, chopped
1 red bell pepper, seeded and chopped
3 (15-ounce) cans black beans
2 tablespoons ground cumin
1 1/2 teaspoons coriander
Salt and pepper
2 to 3 tablespoons plus 2 teaspoons hot sauce, divided
2 cups chicken or vegetable stock
1 (15-ounce) can diced tomatoes, diced tomatoes with peppers and onions or, stewed tomatoes

Heat a medium soup pot over medium-high heat. Add EVOO to hot pot then bay leaves, jalapeno, garlic, celery and onions. Cook 3 to 4 minutes, then add red peppers and continue to cook. Drain 2 cans of beans and add them. With remaining can, pour the juice and half the beans into the pot. Use a fork to mash up the beans remaining in the can. Stir the mashed beans into the pot and season with cumin, coriander, salt and pepper and 2 to 3 tablespoons hot sauce. Add stock and tomatoes to the stoup and bring to a bubble. Reduce heat and simmer 15 minutes over low heat.

spaghetti with homemade marinara and lots of fresh summer squash.

I made some ww garlic gruyere bread this afternoon that is on its last rise right now, I'll pop that in the oven to bake while the sauce is simmering.

I think I might also try an asparagus and arugula salad with a shallot vin. from this month's Bon Appetit.

DS and I made homemade marshmallows this morning, so we might have one or two before we head out to nephew's little league game @ 7.

I tried a new recipe tonight and wanted to post it....it was sooooo good and so flavourful....if anyone likes thai curry's this is a must.....

Curry Meatballs

1 lb extra lean ground beef
2 tsp olive oil
salt and pepper

2 tsp olive oil
2-4 garlic cloves minced
1-2 tble red curry paste (not powder)
1 can lite coconut milk
2 tble natural peanut butter
2 tsp fish sauce

-make meatballs by adding the salt and pepper and shaping into balls
-sear meat in 2 tsp of oil and then transfer to oven to finish cooking

-for the sauce add 2 tsp oil and garlic for 1- 2 min (don't let it burn)
-add curry paste and stir around pan for a minute to release flavors
-add milk, peanut butter and fish sauce
-cook a minute till hot and thickened
-when meat is done add to sauce and serve
-leftovers can be frozen

Mexican chicken salad - Basically a big green salad with some grilled chicken, cheese, and homemade yogurt/mayonnaise/salsa/tabasco dressing on it. Mine will have some avocado, too. Glass of red wine. Half a grapefruit.

I made the chicken w/ avocado and Swiss cheese melt. It was pretty good, although I will spice it up the next time and add some sliced tomatoes, too. I had it with roasted green beans.
