The South Beach Diet Parties & Holidays Cookbook has a "Passover Seder" section that includes recipes for Haroset, Gefilte fish, Matzoh ball soup, Roasted salmon, Squash and tomato tian, and Flourless chocolate-orange torte. Two of the recipes are P1 (the salmon and the squash-tomato tian) and the torte is P3. The rest are P2.
I haven't tried any of the Passover recipes, but the other stuff I've made from the cookbook has been very good.
