Lightbulb Cottage Cheese Smoothie

Hey, in my desperation for something sweet while on P1 last week, I made a protein shake/smoothie. I used the tiny bit of plain yogurt I had left with all natural (no sugar) protein powder, FF milk, and coconut and pineapple SF syrups. But I didn't have any more yogurt, so I decided to substitute FF cottage cheese. I added some ice and whirled it together and it was DELICIOUS!!! I was shocked at how thick and rich the cottage cheese made it! Suffice to say, there'll be cottage cheese in my smoothies from now on!

Just wanted to share!

What goes in your smoothie?

That sounds yummy, Laurie! I actually used cottage cheese in my Cheesy Frittata recipe I made for breakfast this morning. It called for 1/2 cup of the stuff to be blended with something else and the egg substitute and then poured over the sauteed veggies. Delish!

My smoothies are definitely not Phase 1 approved! I use frozen strawberries, fat free plain or vanilla yogurt, one banana, and a couple tablespoons of peanut butter. If we have a mango around the house I'll throw that in, too. So good! Can't wait for fruit...eight more days on Phase 1!

Yum, a smoothie on a hot summer day sounds divine! Do you have it in place of a meal, or just as an extra?
I make a smoothie using cantalope, the recipe is posted in the recipe board in Phase 2, but I would have it in place of a meal.

Cottage, I count it as a snack--it's about the same amount of fruit and yogurt I use for a snack, so I figure it's the same, just blended with ice and more protein! I do have it for breakfast sometimes, though--it's really transportable.

Wow, your smoothies sound wonderful, Kara! The PB sounds interesting!

One tip I got from a deck of smoothie recipe cards I got from my SIL is to freeze fruit and use that in place of ice cubes...they don't turn into water when they melt. But in P1, I used ice.

I just buy the frozen strawberries at the store. Cheaper than fresh, and I like how they froth up the smoothie without using ice.

I did try raspberries once and that didn't work out so well. Too many seeds.

Credit my husband with the peanut butter addition. He likes to put a packet of Carnation Instant Breakfast in, too, but that is not a South Beach recipe. We like the natural peanut butter. He'd put in chunky but I prefer smooth for SMOOTHies!

All this fruit talk has me drooling...
