You can subsitute it for spaghetti noodles for starters! It's yummy!
I make it this way: slice in half, put cut side down in a microwave safe dish, put about 1/4 cup water into the dish, cover with plastic wrap and let it cook for 7 minutes (your mileage may vary). It will be very HOT when you take it out so be careful! I've burned myself with steam a number of times. Then ya scoop-scoop-scoop the stringy stuff out with all your might (i use a big fork). Just when you think you're done scooping...scoop some more!
I usually get a jar of low fat pasta or marinara sauce (anything from Trader Joe's is the best!) and pour it on, adding a little shredded cheese to it (or instead of cheese, i'll shred some carrot for color). I also add a ton of garlic to it (I'm living with an Italian, so garlic is gold in our house). A touch of cracked black pepper on the top and you are good to go!
