Default Mexican Chicken Soup

A friend gave me this recipe and it is very good!

Season 4 chicken breasts with Morton's and pepper and cook (I use my George Foreman but you could broil them)

When the chicken is done, pulse it in the Cuisinart until it is chopped up. Add a bunch of cilantro, an onion, and a small jalapeno. Then add chicken broth (I think about 8 cups) and simmer for 20 minutes.

You can serve it with whatever you'd like, FF sour cream, light cheddar cheese, baked tortilla chips, or anything else you can think of.

I'm not sure what the counts would be, maybe 1 1/2 cups would be 1P, 1V before condiments.

I made this today with a couple of modifications. It was excellent. I added one can of chopped, no salt added tomatoes and 2 cups of frozen corn kernels. I served it with FF sour cream and LF shredded cheese. Big thumbs up!
