Default Flax meal

I've eaten items with flax in them before and even years ago I would buy flax seeds and grind them or buy flax meal. For the past couple months, I've been thinking about buying flax meal and adding it to various items. Well today I did it. I added just a little flax meal to my yogurt/cottage cheese/blueberry mixture. I have to say that flax meal is really good. It added a really nice flavor. I can't wait to try it in more items. I guess I'm rediscovering flax and I recommend it.

I tried putting some in a batch of bread yesterday and ended up throwing the whole mess out. I think the brand I bought was "red" something but can't remember. It did say to keep it refrigerated though, and I never knew that.

The reason I added it was that the package said flaxmeal can be substituted for oil, 1 to 3 parts. It gave an example that if a recipe called for 1/2 cup of oil, you could use 1-1/2 cups of flaxmeal in place of the oil.

Didn't work in the bread but I'm not giving up and will try again. Tonight I'm making a bread with Shiner Bock beer in it and while it's not probably considered a whole food, it's an experiment and I'll more than likely take it to work tomorrow anyway. I'm looking for a nice hearty brown bread to make that I can spread the yocheese on. I think I'll try adding a little flaxmeal at first and go from there.

Might I add ... my family thinks I've lost my mind.

I like to sprinkle some flax over my cereal, and often use it in baking - added to breads, bran muffins, and crumble toppings for fruit. My cousin is a naturopath and gave me this recipe for "egg replacer" years ago. You can use it in place of eggs in most baked goods - often you can't really tell the difference between items baked with eggs vs. items baked with the flax. Eggs are fine, but the replacer gives you added fibre, omega fatty acids, calcium, potassium, etc. You may want to give it a try:

EGG REPLACER

1/4 cup flax seeds
3/4 cup cold water

Combine flax seeds and water in a blender or food processor. Mix until the seeds are thoroughly crushed. This amount will replace 3 eggs.

Could some one off the top of their heads explain the benefits of flax? Can you buy it ground up? Thanks!

My problem with flax seed/meal is that it comes in a larger quantity than what I would use before it went bad. I need to find someone to split a bag with me!
