JALAPENO-RED BEAN BURGERS

  • The new cookbook doesn't have a honey-mustard recipe, but...

    For the Vegetarians among us (Yogagurl, that's you!) and anyone else, I thought this sounded really good...it's from the new Cookbook, and makes 4 servings (burgers), each counts 1/2 protein, 1 V, 1 S:

    JALAPENO-RED BEAN BURGERS

    1 15-1/2 oz. can kidney beans, drained and rinsed
    1 small finely chopped onion
    1 small chopped tomato
    1 jalapeno, seeded and chopped (optional)
    1 garlic clove, finely minced
    1 tsp. chili powder
    1/4 cup BBQ sauce (watch the sodium on the label)
    1/3 c. breadcrumbs

    1. Mash beans in bowl with a fork
    2. Add next 6 ingredients
    3. Add enough breadcrumbs to form patties (4 patties)
    4. Make the patties
    5. Skillet-grill with Pam until heated through, about 2-3 minutes each side
