Default I need a good Fat Free Apple Cinnamon Muffin Recipe

Hi! My grocery store makes a great fat free apple cinnomon muffin but I'm getting tired of having to be there on the "right" days to get them. I can make my own if I had a good recipe. Does anyone have one? The only thing I ask is that they not exceed 4 points for a 4 oz muffin. Please email me the recipe at [email protected]. Thanks!

Check out the W W Bread and Grain thread. I just pulled up my favorite Cinnamon Bran Muffins. They call for 1/4 c of raisins, I use the golden ones, but you could try 1/4 c of cut up dried apple or take a peeled tart apple and try that. This recipe already has apple butter in it. Maybe another option would be chunky apple sauce. I eat these every day.

Lightbulb Apple Cinnamon Muffins

I don't follow the WW plan so I can't tell you the point value in these. But at least this should give you some starting point.

Recipe #1

2 1/2 cups oat bran
1 1/4 teaspoon cinnamon (or more)
1 tablespoon baking powder
1/2 cup evaporated skim milk (or soy or rice)
3/4 cup apple juice concentrate
2 egg whites
1 medium apple, cored and chopped, not peeled

Preheat oven to 425F. Mix dry ingredients. Mix wet ingredients. Blend together, stir in apples.
Bake for about 20 minutes

Note: For a moister muffin add in either 2 mashed bananas or 1/2 cup applesauce.



Recipe #2

1/4 cup apple sauce
1/2 cup sugar
1/2 tsp vanilla
1 egg white, beaten
1 1/4 cup flour
1 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1 1/2 cups chopped apples (these need to be small pieces or the muffins tend to fall apart).

Mix dry ingredients. Mix wet ingredients. Blend together and add apples at the end and fold in gently. Bake at 350 for 20 min.



Recipe #3

1 16oz. can applesauce
3 C oatbran
2 egg whites
1 T. baking powder
1/2 C sugar
1 tsp cinnamon
1/2 tsp vanilla

Mix above well and spoon into paper muffin
cups placed into muffin tin. Cook at 425 F
for 17 min. Makes 12 muffins.


Recipe #4

2 large green cooking apples
2 cups whole-wheat pastry flour
1 cup unbleached white flour
1 1/4 cups oat bran
2 1/2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 12-ounce can apple juice concentrate
1 cup water

Heat oven to 325° F. Lightly oil muffin tin. Peel and core apples and chop coarsely. Set aside.

In a separate bowl, sift together pastry flour, white flour, oat bran, baking soda, cinnamon, and nutmeg.

Add thawed apple-juice concentrate, chopped apples, and enough water to make a light batter.

Mix just enough to moisten all ingredients. Divide batter among the muffin cups (makes 12) and bake till lightly browned, 25-30 minutes.

Remove muffins from cups while hot

You might also want to check out the Krusteze Muffin mixes sold in the grocery stores in the baking section. Very good and very weight watcher friendly.

duncan heinz also makes a wonderful apple fiber muffin mix.... i belive it is 2 points if you use the applesauce in place of the oil

Default Fat Free Apple Date Muffins

¼ cup applesauce
½ cup Splenda
½ tsp vanilla
1 egg white, beaten
¾ cup flour, whole wheat
½ cup flour, all purpose
1 tsp baking soda
½ tsp cinnamon
¼ tsp nutmeg
1-½ cups diced apples (with skin)
½ cup dates chopped fine

Mix dry ingredients. Mix wet ingredients. Blend together and add apples at the end and fold in gently. Spray pan and spoon batter into 12-count muffin pan. Bake at 350 for about 20 min. While hot, lightly brush a mixture of Splenda and water on top of each one for added sweetness without the calories.
Each muffin is:
75 calories
0.3 gram fat
18 carbs
2.0 protein
110 sodium
2.1 fiber
I eat two in the morning without guilt.
