Default Lime Chicken Tacos

Lime Chicken Tacos - makes ~10 tacos Serves 4-5

1 1/2 pounds skinless, boneless chicken breast meat - cubed
1/8 cup red wine vinegar
1/2 lime, juiced
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 green onions, chopped
2 cloves garlic, minced
1 teaspoon dried oregano
whole wheat tortillas, whole wheat pita, can even serve this over bulgur wheat or brown rice if you like
1 tomato, diced
1/4 cup shredded lettuce
1/4 cup shredded Monterey Jack cheese - low fat
1/4 cup salsa (low sugar)

Toss the chopped chicken into a ziploc bag. Add vinegar, lime juice, salt, pepper, green onion. garlic and oregano. I usually try and marinate this overnight for best flavor.

Saute the chicken in the marinade until done. You might need to add some vegetable stock or a dash of olive oil to saute. Fill tortillas with the chicken mixture, lettuce , tomatoes, a bit of low fat cheese and salsa.
