Sweetener - had an 'accident' yesterday!

    I've been using Canderel for sometime now anyway on fruit and cereal, although it froths, I've not really found a problem with aftertaste.

    Yesterday I thought I'd make some oatcakes.

    What is it they always drummed into you at school - ALWAYS READ THE INSTRUCTIONS

    Unfortunately I read 2.5 oz of sweetener. After using over half the bottle and still only being about 1oz I decided to stick with that. It was only when Mr T came home and read it as the equivalent of 2.5 oz sugar .

    Canderel is really light so the only way I could have done it is measure the caster sugar and use the same vol of canderel. There has to be an easier way.


    What sweeteners does everyone use for cooking etc and what is the best for no aftertaste??


    (PS the oatcakes are ok, a bit dry and do leave a bit of a funny taste in the mouth when you stop eating them!)
  • The only one I have ever baked with is splenda. It's ok, it doesn't brown so your muffins or whatever look a bit anaemic. I bought a heap of splenda when I started this last year, and still have heaps left coz I decided I didn't like it!

    I'm not a complete sugar avoider. I basically look at the recipe and if its only a small amount, I leave it in, if its a large amount, I scrap the recipe and make something else.
  • splenda is meant to be good for cooking but it doesn't taste as nice as canderel. Fortunately for me I'm not much of a sugar person so cutting it out doesn't bother me at all. i only have sweetner in porridge and I've just nicked some sachets from cafes for that lol
  • Well...this is how I usually work it and it seems to have gone ok for me...1tbs sugar is about an ounce but sweetener is a lot sweeter than sugar so I usually use about 1 tablespoon of sweetener for every two ounces. You might also need to reduce the amount of liquid in recipes too as sugar tends to soak up stuff more that sweetener.
  • I use splenda. But I did exactly the same as you when I cooked with it! The resulting biscuits were inedible

    I haven't yet worked out an easy way of doing it.
  • Glad it's not just me willow . I tried another one at work yesterday - they are definitely going in the bin! The only good thing is that after eating 2 bites of one it puts me off eating anything else
