My center put out a little sheet listing equivalents for some common Thanksgiving foods:
1/2 cup mashed potatoes, sweet potatoes, or squash = 1 starch
1/3 cup stuffing = 1 starch and 1 fat
Pumpkin pie, 1/8 pie = 1 starch and 1 fat (my maintenance guide says that this should be 2 starch instead of 1)
Apple or other fruit pie, 1/8 pie = 1 fruit, 2 starch, 1 fat
Lite eggnog = 1 starch, 1 dairy, 1 fat
The sheet does say that most of these options are special for the holidays, and you shouldn't build them into your daily menus.
