Almost everything I make produces at least one leftover serving for DH and me. We usually eat them for lunch the next day, so we don't freeze them, but we easily could.
There are lots of easy meals you can make quickly on SBD...you just have to have the ingredients on hand. A salad is, of course, always easy to make, but you can make it fun and interesting by adding ingredients like walnuts, apples, bleu cheese, feta, sundried tomatoes, etc.
You can make a pizza on a WW Boboli crust (I keep one in my freezer, just in case) with tons of veggies.
You can make sandwiches and heat up an SBD safe soup (lentil in a can is safe here--our local store brand is okay, as well as Progresso, from what I can tell) along with some frozen veggies.
There's tons we can do...just keep looking!
I also love the "Superfast" section of Cooking Light...meals ready in 20 mins or less. They are yummy and easy to make!
