Thumbs up Recipes!

I thought it might be fun if we had a recipes thread where we could post some of our favorites, and try other people's yummy foods!

I'll start with a recipe from last night, I calculated the nutritional info with fitday. We have a basil plant so we needed to make a recipe with basil!

Thai Basil Chicken

4 boneless skinless chicken breasts
1 1/2 Tbsp oil (I used canola, the originaly recipe only calls for 1 Tbsp but my info is calculated for 1.5)
2 Tbsp minced garlic
1 C fresh basil
3 Tbsp lemon juice
3 Tbsp water
1 Tbsp soy sauce
1 Tbsp sugar
1/2 tsp black pepper

Combine garlic and oil over medium high heat until golden, about 3-4 minutes. Remove garlic, set aside. Add chicken to oil, cook until lightly brown (both sides), about 5 minutes. Thinly slice basil. Add 1/2 C basil to pan with remaining ingredients, add garlic back in, and simmer until chicken is cooked through, spooning sauce over it often. Put chicken on a platter. Boil the juice/sauce uncovered until reduced to about 1/4 C. Stir in remaining basil and pour over chicken.

Makes 4 servings (serving size: 1 breast + 1/4 of the sauce)
Nutritional info for 1 serving:
calories -- 356
fat -- 11 grams (2 sat, 3 poly, 5 mono)
carb -- 7 grams, 1 fiber
protein -- 54 grams


For dinner last night, I had 2/3 of a piece of chicken, 1/2 C rice, and a mixed greens salad, and it was delicious! Obviously the recipe can be modified to your taste and needs, like using less oil and sugar, using low-sodium soy sauce (we did this), etc.

Anyway, I hope some of you ladies have some good recipes to share!

OK, I have a recipe too. This is one I made BEFORE I was trying to lose weight but I found out it was actually good for me. You have to be prepared for a wild color (pink) on this one but I LOVE them.

Enchiladas Rojas


2 medium red peppers
1 package cream cheese, softened (8 ozs, I use light but you can also use non fat)
3 cups shredded or chopped chicken (I use 1.5 pounds boneless skinless and boil it until it shreds)
1 cup shredded Monterey jack cheese
¾ cup picante sauce
½ tsp. Salt
8 flour tortillas (7-8 inches)

Chop peppers (one in thin slices, other in smallish chunks). Put chunked pepper in blender along with cream cheese, picante sauce and salt. Combine chicken, sliced pepper, and ½ of the picante/cream cheese sauce mixture. (the recipe doesn't call for the peppers to be cooked but I saute them with the chicken until they are tender and keep it warm while I'm mixing up the sauce) Spoon chicken mixture down center of each tortilla. Roll and place seam side down in lightly greased baking dish (I use PAM of course). Spoon remaining sauce over enchiladas. Cover with Monterey jack cheese. Put in oven at low temperature to warm throughout. I usually just put it on 275 or 300 and let the cheese melt slowly. If you put it on too high then the tortilla will burn.

Yummy yummy!

By the way, these are 286 calories each if you use the Aztec flour tortillas I use (2 tortillas for 130 calories). It could be a touch more if you use different flour tortillas. Happy eating!

Oooh, I LOVE recipe threads!! Here's mine from last night (I don't know the nutritional info though):

WHOLE-WHEAT GRILLED CHICKEN BURRITOS

8 boneless, skinless chicken breast strips (frozen or fresh)
1 small red onion
1 large can of fat free refried beans
1 pkg fat free cheddar cheese (any cheese is fine)
1 jar of salsa
2 pkgs taco mix (I used Taco Bell Chipotle mix)
Cilantro (fresh or dried)
8 whole-wheat tortillas

Grill chicken on a George Foreman-type grill. Once done, shred the chicken and place in a skillet with 1.5 cups of water and 2 packages of taco mix. Bring to a boil, then reduce heat and let simmer for 10 min or so stirring occasionally. While chicken is simmering, place tortillas on a plate (spread out) and microwave for about 50 seconds to warm and soften them. On each tortilla spread a couple of good spoonfuls of refried beans and add a sprinkle of minced red onion, a couple of spoonfuls of the chicken, and roll up the burrito leaving the ends open. Once all 8 burritos are rolled up (I usually put 4 to a plate), add cheese and salsa on top. Microwave for 3 minutes, or until cheese has melted. Sprinkle with cilantro. Serve burrito on separate plate, and enjoy!

This makes 4-8 servings, just depending on how much you can eat...LOL. I had one burrito and was stuffed, but my hubby ate like 2 and a half...(and he's skinny, it's SOOO not fair). We still have enough leftover for dinner tonight and possibly even lunch tomorrow!

Also, a good side item that I made last night (which I think I've posted somewhere else on here but I can't remember)...SPICY BLACK BEANS:

1 can of black beans
1 medium tomato
1-2 Anaheim peppers
1-2 jalapenos
1 small red onion
Lime Juice
Onion Power
Cilantro

Peel tomato and de-seed to get some of the moisture out (just squeeze it)...dice the tomato very finely and add to pot with can of black beans. De-seed and finely dice the peppers, and finely dice a few tablespoons of onion and add to beans. Add about 2 tbsp lime juice, 1 tbsp onion powder, and a liberal sprinkle of cilantro to the pot and let simmer. If you put these on before starting the burritos, they'll be just right once the burritos are done.
