Default Camping Vacation - Menu help

We are leaving next weekend to spend 10 days in the Rocky Mountains on a family camping trip. I am very excited about going but really nervous about finding things to eat while there. Does anyone have any good ideas for portable meals that will travel well? Also, for any recipes I can cook while at the campsite that will allow me to stay on program?
My kids are perfectly fine with picnics and sandwiches but I am on the Gold plan and only have 2 starches for the whole day!!

Any helpful advice?? Thanks,Kim

What about kabobs over the campfire - meat with lots of vegies - charred over an open flame - sounds yummy for dinners!

Just a few suggestions:
1. Cook some meat before you leave, freeze the cooked meat, then pack it frozen into a cooler. This way, it will keep a little longer and since it is already cooked you don't have to worry as much about germs, etc.
2. Cheese keeps well, and is a reasonable way to get in your dairy portion.
3. I was camping recently (only for a couple days) and I found that the peanut butter and jelly carb cravers option was pretty convenient!
4. If you eat tofu at all, you can buy packaged tofu that doesn't have to be refrigerated--brush it with seasoning and grill it (in a fine mesh grilling basket, or it will fall apart) and it tastes pretty good. You can grill some vegetables to go with it, as well.
