Any vegetarians out there? Share your best meatless tip :)
We're curious how the average vegetarian handles a diet like South Beach. If you are a vegetarian, or even if you eat meat but know how to incorporate balanced meatless meals into your plan, please share your tips
I guess I'll step up to the place first. I'm a vegetarian, and thought it'd be hard to come up with food to eat, but really it's not so bad. I'm only on Phase1 (which I would think would be the harder of the two for vegetarians) but I seem to be doing okay.
For breakfast, I make a quiche thing up on Sunday and can eat it for 2 weeks. I take a carton of Southwestern Eggbeaters, 2 packages frozen spinach, 1 package lowfat cheddar cheese, and some tobasco sauce (5 or 6 drips will do) and mix them all up in a bowl. I take foil muffin cups and put them in the muffin pan, spray them with SBD-approved spray, and dump the mixture in them. I then bake at 350 for 35 minutes, cool, and then put half in the fridge and half in the freezer. Makes a quick breakfast I can take with me to work! Also, a small can of vegetable juice goes right along with it (I like V8 Spicy Hot.)
Snacks are usually 20 peanuts, or string cheese, or something along those lines. I like to save my sweets for the end of the day.
Lunch varies....I found that you can make the Taco Soup (on the recipe board) with Boca meat or Morningstar or even without a meat substitute and it tastes WONDERFUL. Also something that I can make on Sunday and throw in a tupperware bowl each morning and take to work. Otherwise, it's a big salad with veggies and cottage cheese, maybe even a few sunflower seeds on top.
Dinner tends to be a toughie since I'm ready to eat. Sometimes it's a big salad, sometimes it's stir fry veggies w/peanuts and low-sodium soy sauce. I usually add a snack to my dinner, too, like Laughing Cow Cheese on celery, or veggies and hummus or something like that.
Dessert, I do SF jello with FF cool whip on top, or the Peanutbutter Cup (see recipe board) or Decadent brownies (again, see recipe board.) They're all so good!
I used to be vegetarian but now eat meat a few times a week so this probably doesn't count because I know I can get some protein from meat and this influences my meals. I eat vegetarian chilli or lasagne (tomato sauce and italian veges with or without kidney beans), stir fries with a handful of nuts, low carb sauces (curries etc) with loads of veges (would have this with a milk based desert for protein), greek salad, and homemade soups.
I'm not a vegetarian, but I enjoy vegetarian meals. I love "Inspired Vegetarian" in Cooking Light...it's a column with a ton of Vegetarian recipes. They are fantastic! Check them out at www.cookinglight.com This week I had a Lentil dal with FF yogurt and cucumbers in a WW pita...a recipe from CL.
I think a lot of beans is great for vegetarians on SBD...helps with the constipation issues, too!
Mauvais might have some great ideas...and there might be some info on SBD vegetarians in her recipe forum.

There are some lovely recipes for vegetarian/vegans on the Alternachicks Fab Food forum- not sure how SBD friendly they are but they can probably be adapted by switching for low-fat cheese, low fat sour cream, whole wheat pastas and cooking sprays instead of oil. I should maybe put SBD compatible ratings on them.... I will see what I can do.....
I try for a vegetarian meal once a week - it assuages my guilt about animals!
I find that egggplant, mushrooms and summer squash keep me from missing meat. I sometimes serve a vegetarian chili or pasta sauce made with bulgar or TVP. Harry never knows the difference!
