Jen, if the onions you are talking about are truly dried, then they would be fine. But the ones that you use for Green Bean casserole (French's Fried Onions) are
fried, not
dried. Those are absolutely not okay because of their fat content. They do not list the ingredients online, but check out the question about gluten here:
http://www.frenchs.com/french-fried-...p?articleID=45 They appear to also have wheat flour. If it is whole wheat (which I doubt), and the fat truly was low with no "bad fats", they would be fine, but I doubt they meet those requirements.
Instead, when you get to Phase 2, check out the onions in the green bean casserole recipe in the cookbook. You could probably use those on a salad.
For crunch and taste, why don't you make the roasted chickpeas recipe in the forum and toss them on top, or perhaps soy nuts? You could also use toasted nuts. A salad with walnuts and bleu cheese is divine and Phase 1 safe, as long as you don't use too much bleu cheese!
