on eating more veggies
Well.
This is interesting.
My face used to have these red blotches on the sides of my cheeks. They've disappeared. Now, mind you, I am only eating about 3-4 USDA sized servings of greens and yellows, but i do it every day. And my skin just looks better, softer and smoother and more even skin tone and i swear i'm not using any new and fabulously expensive skin care products.
may actually throw away the skin care products i already have if this keeps up!
I had veggies in a foil packet on the grill last night....Brocolli and green onions from the garden, sliced carrots and mushrooms. Drizzled with EVOO and wrapped in foil, put them on the side of the grill so they won't burn,just steam...unwrap after about 8-10 min and sprinkle balsamic vinegar on 'em...yum yum.
Also wrapped a sliced potato in foil with EVOO and a touch of italian herbs,and some grilled chic breast.
Veggies love us back by making us HEALTHY...what a gift.

What's EVOO? Extra Virgin Olive Oil?
Golly, i LOVE that stuff? A heart-healthy fat that tastes good, comes from Nature and not some chem lab, and is relatively cheap! I have been known to sop up what's left on the plate from whatever veggie dish I drizzled it on with a slice or two of crusty, dense sourdough-based bread.

All the different veggies at my local grocery store! it's fun take something newish home and find ways to cook it. Or find new ways cook something I'm familiar with.
When I was a little girl my mom would boil potato's and drizzle it on them,we ate tons of it, not sure if that was the Cuban in her or not.
But it sure is nice that its so good for you.
You have to be careful with that yummy olive oil, though. That's stuff is 120 calories a tablespoon (Bertolli extra virgin), and if you have enough on a plate to sop up with bread, you can scarf up 500 calories in seconds. Voice of experience, here.
I still don't understand how you can be "extra virgin," though.

oh, no worries on that score. Awhole tablespoon of any oil is about twice what i usually use. and it helps to keep the rest of the meal fairly low-cal.

Does anyone here own a Wok? (A traditional Chinese cooking pan). Try this: heat one tablespoon of sesame oil (much better for you than olive oil), then add slices of broccoli, carrot, baby corn, cauliflower, snow peas, bamboo shoots, red capsicum (red pepper) and slices of green onion, and a few leaves of bak choy (Chinese cabbage)...stir fry for a few minutes, add some herbs & spices to your liking, and you've got yourself a wonderfully tasty veggie meal. I sometimes stir-fry a bit of tofu to add to the mix, because my housemate's a total meat-lover but he swears tofu's a great substitute.
Honestly...since I've been watching my dietary intake, I've sworn off olive and veggie oil, and switched over to sesame oil. I don't know why, but it works.

Why is sesame oil better for us than olive oil? Can one substitute sesame for olive in spinach lasagna? I think not.
Olive oil is a Mediterranean thing and sesame oil an East Asian thing. Yeah, I know fusion cooking was real trendy for a while there, but not so much anymore 'cause it just doesn't taste all that good.
I eat real eggs, too. Scrambled in just enough real butter to coat the skillet.
If you want to take something harmful out of your diet, try reading labels of prepared food products. Look for stuff like High Fructose Corn Syrup, partially-hydrogenated vegetable oils, sugars that came out of someone's lab, sh*t like that. Leave that junk alone for a while and you'll feel MUCH better.
