I don't know if you remember my mentioning that the mashed cauliflower I had at Ruby Tuesday a couple weeks ago was green. I wrote to them and received this reply today:
"Thanks so much for writing! I am sorry for your disappointment in our
cauliflower. We have had a problem with the 'leek powder' that's in the
cauliflower turning green. As a result, we have taken it out and
replaced with onion powder and the green problem should go away.

Interesting! Maybe that is what caused the grainy/powdery texture I noticed.
Not to change the restaurant or anything, haha...I went to Applebees recently and they are serving "Smashed Cauliflower"...one would think it's like the wonderful whipped stuff we make...WRONG...I think they steamed it, put it in a boal and pushed a spatula down on it...therefore...SMASHED! So just in case you have your heart set on it like I did...
I'm totally with you on the leeks, Ellis...I love them too! Good ole' leek and potato soup was a great favorite of mine! However, leek powder? Now that sounds just weird. I'm not sure why, though. Maybe just because the cauliflower from RT tasted kind of grainy, like the powder was not fully combined with the cauliflower.
Geez! I just realized it's time to brave the mosquitos and go dig some wild leeks in the woods! Leek and potato soup? I wonder how it would work with sweet potatoes. Or make it with cauliflower! Drat! it's the wrong time of the year to start with the kitchen creativity crap! I need to garden.
