I'd love to be able to add jicama as part of my crunchy snack vegetables, but haven't yet been able to find anything on its GI, or reference to it on the SBD. Anyone know?
I use www.fitday.com to check foods. According to fitday, a medium jicama has 250 calories, 58 grams of carbs BUT 32 grams of fiber so I'm pretty sure it's low GI!
Also called Mexican turnip. It's a root but it's also a legume. I've tried it. You peel it and cut it up. Looks like a potato but crunchier. It tastes like water chesnuts.
MMMMMMMMMMMMMMMMMMMMM to Clovey!
Yuck to Bamiegurl! I don't like water chestnuts. Thanks for the info though. I've learned sumin new today and it's not even 7:15 yet! yea
the 'official' word from the SBD site - trust me, if you guys aren't on it, you're not missing much. my thinking was that jicama was like water chestnuts and they'd be Ok in Phase II, but... I guess I'll eat them in limited quantities. I was about ready to go crazy on them cuz I like them so much. I liked Ruth's answer better, which was actually more informative thant the silly site's IMO ;-)

Jicama does not have an established GI, it is compared with other foods similar. Since jicama is a root vegetable, and most root vegetables have a high glycemic index, we recommend avoiding it until late in phase 2 or until phase 3.

Rachel is full of Jerusalem artichokes, IMHO.
I'll track down its GI. It HAS to be OK with fiber that high .... unless Fitday is wrong? And if Fitday is wrong, who can we trust? I'm glad I didn't sign up for the SBD website.
Hi All,
Being from San Diego (right next to the Mexican border), we grew up having Jicama as a snack. If you go over the border the street vendors sell it from a cart with lemon and powdered chili powder. they also do it with cucumbers.
It is great cut up in long strips and soaked in lemon juice. I hope we can have it!!!
