I hate to break this to you Rose but we got "fluffy" by eating PB and Jam sandwiches and cake and cookies!

No matter how you look at it, baking is not "good carbs" especially with honey or maple syrup.

You could run a recipe through fitday or MasterCook to see just how many carbs are in it.
In the book, nothing is mentioned about how many carbs we can have per day but most people try to limit carbs to a single serving at each meal. Whole grains, legumes and fruits are good choices.
