I'm looking for quick and easy lunch ideas. What do ya'll eat for lunch?

I am so glad you mentioned chili!! I was just thinking about what I was going to eat. I usually eat some ham and cheese, or an avocado with lemon...getting a little tired of that though...leftover chili sounds much better! I also bought those sealed packs of tuna and salmon to have for lunch..haven't had them yet, but I will. Yesterday I had devilled eggs, it was something different.

I'm a teacher and normally only get 20-30 minutes for lunch, so it has to be something I can eat quickly. Normally I bring leftovera from last night's dinner or have a salad with some meat and cheese. It's funny that ya'll mentioned chili. My husband and I ate at Wendy's for lunch today (holiday, of course) and I had chili. I told him I could easily eat chili for lunch everyday. He suggested I buy 5 small chilis to go and take one to school each day.

Turkey Roll Ups.... absolutely wonderful!

Took the receipe from Dr. A's SBD book. Made a mayonnaise with cilantro, garlic, soy and lime juice.

Yesterday, purchesed thinly sliced deli turkey. I have red leaf lettuce, and bought something new for me to try... Asian Cabbage. Took a slice of turkey, smeared about a teaspoon of the mayo on the turkey, placed it on a large leaf of lettuce, rolled it up, was wonderful, but actually, I preferred the roll ups on the Asian Cabbage. Very mild "cabbage flavor", soft yet crunchy.

If ya don't like Cilantro... this wouldn't be good because the cilantro is strong.
Actually, couldn't taste the turkey.

Tomorrow for lunch, plan the same thing, except will put the cilantro mayo on the cabbage/lettuce leaf, roll them, and roll turkey on the side, so I'll have rolls of lettuce and rolls of turkey.

With the freezer packs, should be easy to take to work. If I carried my lunch, I'd apply the mayo just before I ate, then roll.

Can you eat chili in Phase I? I made a big batch for the Football game Sunday, and didn't know if I could eat it? LOVE chili!

I opened a can of tuna (in water), drained it and dumped about 1/2 can on top of some lettuce; had steamed broccoli on the side.

Loulou...look under recipes...I posted an SBD friendly chili recipe, and it was very good.

Hi All,

So glad you asked about lunch. I get so bored rolling up turkey. Chili sounds wonderful. Hope I can find the recipe. I made the mayo with cilantro and hated it Today I bought the Smuckers natural peanut butter and an "all fruit jelly" Hope I am allowed to eat a PBJ.

well I have been eating a sald with sauted mushrooms, onions, and lean beef tips on it and I also throw in a few eggs and I use ranch dressing. I think it is wonderful. But I also like tuna with mayo and eggs in it on some lettuce. Maybe a dallop of cottage cheese. I'm fixin to go look up that chili recipe cause I love chili. Won't be the same without the frito's but I can still have the cheese and i'm gonna check on the sourcream.

What I LIKE to have for lunch is a salad from one of those "pick your own" places. I found a great one that has salmon, but can't seem to find a dressing that works- used to love the lowfat lemon vinegarette, but I'm thinking it has sugar. I think I'm going to break down and ask for the ingredients list! The O&V just doesn't work for. Anyway, I get a HUGE bowl of greens, steamed brocolli, bell peppers, mushrooms, and whatever other veggies look good and fresh, then baked salmon or grilled chicken.

Sometimes I end up with veggies and hummus or LC chz.

Oh, and Rose, ummm, I'm not sure what you made, but you might want to check out the last couple pages in the "Hello, Bread" chapter (p. 49-50 in my version).
