any ideas on what cuts to look for? is filet mignon out of the question? how about strip steak?

Here's the Beef list from the Frequently Asked Question Section in this Forum:
BEEF Lean cuts, such as:
Eye of Round
Ground beef:
-Extra Lean (96/4)
-Lean (92/8)
-Sirloin (90/10)
Tenderloin
Top Loin
Top Round

I don't know what a strip steak is but it's probably like a sirloin. Filet mignon is tenderloin so you're OK there.
The numbers in brackets are the lean/fat percentages.

I usually visually check out the cuts of meats at the store, too.

The leaner it looks, the better. Visual fat is not a good thing on SBD.

This is tricky as different cuts have different names in different countries. Just go for the leanest cut, I guess.
