Default On the go South Beach Breakfast

I am looking for ideas or recipes for the South Beach Diet Phase I breakfast. They have to be portable. My husband does not eat breakfast at home during the week. And it is too early for me to get up and make breakfast. Any help will be appreciated.

Welcome to The Beach. How about hard boiled eggs, cold cuts, cheese sticks, some raw veggies, pistachios? I'll move this to the other Forum so you can gather more ideas from the smart Beach Beauties.

I like the Vegetable Quiche Cups to go recipe. Great to make ahead, and either freeze or refrigerate. Grab a couple and they make a good breakfast.

This recipe is in the SBD book, and probably on our recipe postl I haven't looked there yet. They are very tasty.

for on the go I usually rely on Hard Boiled eggs, can of V8, String cheese stick, premade stuffed celery, LF ham & cheese roll-ups or those foil packs of tuna.

Marcie how are the quiche cups??? I think I might try to make up a batch.

You are very welcome. Ignore, Ellis! They do taste like spinach but you can make them with other veggies like zucchini and peppers.

I like the quiche cups modified... I make a double batch by doubling everything but the spinach. I also sprinkle salt and pepper on them before baking, and put more cheese in than it calls for. Twice the cheese, half the spinach -- then I can live with them. :-D

Smile Big Fan Of Veggie Quiche Cups Here...

I'm kinda new to this whole SBD thing. Very intrigued by the book so far, have been on the plan @ two weeks now. Can't really tell how much I've actually lost, but I feel different. I'm not craving breads, pastas, popcorn, and that most deadly of junk... ice cream!

One day last year, while in the clearance aisle at Wal-Mart, we found several cans of artichoke hearts. The other day, did the following:

1 package pre-cooked cubed ham
1 can artichoke hearts, diced
4-6 ounces shredded Swiss cheese
Couple tablespoons Parmesan cheese
Pint carton of fake egg

I sprayed down my two baking tins, made for large muffins (each tin has 6 cups). I split my mixture up into 9 cups. An odd number perhaps, but hey, I like a big breakfast. I've had two for breakfast this morning, and have had no cravings so far.

For my next trick: Mushrooms, bacon, & cheddar!

P.S. Yes... I'm back...
