Default Favorite healthy version of a "junk" food?

My current favorite is Cauliflower fried rice. I made it a couple of days ago with: tofu, mushrooms, garlic, bean sprouts, onion, green onion, egg, soy sauce, and some garam masala.

Since I'm just now getting back into this trying to get healthy thing, I'm looking for other good recipes to try.

Any suggestions?

Turkey chili! So good and filling if you put lots of veggies in. Best part of chili is you can make it your own

Spiralized vegetables!!

http://www.inspiralized.com/ has SO many recipes, but my favorites are zoodles with marinara and a little bit of neufchatel to make a creamy tomato sauce that is just awesome,

OR this recipe that I just keep making

Oh, and how can I forget the three things that I make and keep in my freezer at all times for the past 5 years, haha!

Cauliflower macaroni and cheese:
Take one chopped head of cauliflower, steam in a small amount of water until tender. Puree cauliflower, add 1 cup sharp cheese, and season to taste – I use adobo OR salt/pepper/mustard powder. Freeze in ice cube trays until frozen, transfer to a labeled freezer bag. To serve, microwave as many cubes as needed and mix with cooked pasta or a mixture of cooked broccoli and pasta. This can also be used as a cheese sauce for veggies.

Chicken/yellow squash nuggets:
Shred 1-2 squash and squeeze out as much liquid as possible. Mix with 1lb ground chicken, 1 egg, seasoning, form into “nuggets” and bread with your choice of bread crumb. Bake at 425 for 15 minutes on a lightly greased cookie sheet. Cool and freeze on a cookie sheet. Once frozen, transfer to a labeled freezer bag. To serve, microwave until thawed or bake for a crisp exterior.

Turkey/zucchini meatballs:
Shred 1-2 zucchini and squeeze most of the liquid out. Mix with 1lb ground turkey, 1 egg, seasoning, parmesan cheese, and choice of bread crumb. Bake at 425 for 15 minutes. Cool and freeze on a cookie sheet. Once frozen, transfer to a labeled freezer bag. To serve, microwave until thawed or simmer in sauce.

I've been wanting to try that cauliflower "rice." I've just been too lazy to do it. I was thinking of adding some nutritional yeast on top to give it a cheesy flavor. Perhaps add some garlic as well.

I do one entire raw head at a time, then put it into individual baggies - about a cup per, then freeze. That way I don't have to deal with the big mess more than once, just do it one time and have 5-6 servings of "rice."

Can some one tell me how to make cauliflower rice. Rice is one of my favorite things to eat and I would love to find a low carb solution

I just made some shiritaki fried rice tonight. Faster than cauliflower rice, although I might have to try that sometime.

Grate or food process your cauliflower until it's rice-like pieces. Works great with a disk shredder on a food processor or just hand grated. My small processor makes it more like cauliflower couscous.

Saute the cauli-rice with seasonings of choice. I like green onion, salt and pepper for a "plain" rice, or you can make fried rice, cilantro lime rice, Spanish rice, etc.

Here is a pic of one of my freezer meals - Vegan African peanut stew with cauli-rice.

I love cauliflower rice too! I use it as a base for so many of my meals

In terms of really indulgent junk food, chia seed chocolate pudding has been my favourite since I discovered it, especially because I'm lactose intolerant and haven't been able to eat normal chocolate pudding or things like it for years.

Another gorgeous thing to do is make soft-serve ice cream out of frozen bananas.
