I'm also approaching 3 years (2 more months). I find it both easy and difficult. I eat about 2,000 calories per day, but I could easily double that amount. For the most part I healthy, freshly prepared foods, but there's nothing strictly off-limits. I'm cursed with a huge appetite, which hasn't subsided after three years of (mostly) moderation.
