  • Just had cauliflower rice with stir fried veggies with dinner. I'm in love! Who knew cauliflower (which I usually really dislike) could be so yummy?
  • I love it too! (And I don't like cauliflower). You can also use the leftovers to make cauliflower pizza crust.
  • I like frying it in a pan with lots of spices and curry powder, then adding egg whites and scrambling it all together. Like a delicious, fluffy fried rice!

    Ooh! I should try this! We normally just put turmeric, salt and pepper. Great suggestion!
  • I make a Mexican cauliflower rice, especially when I find the orange colored cauliflower. I add chicken broth, sauteed garlic, onion and green pepper, lots of cumin, onion powder, garlic powder, cayenne pepper, chili powder, fresh salsa and cilantro. Yummy! I usually make it with a salsa verde chicken.

  • Any recipe works but the trick is to strain the rice and then dump it into a dishcloth and squeeze the remaining moisture out of it (let it cool, the water will be boiling and you'll get a lot more than you're expecting). It helps the crust stay together.

  • Chicken fried rice: Chicken, mushrooms, green onions and eggs over cauliflower rice. add soy sauce. Heat till warm.
  • Don't forget the cauliflower mashed. This is the bomb and even my kids scarf.
