Default Any Ideas for the Fine Herb and Cheese Omelet?

I had the chocolate drink mix in my coffee this morning and it was great. (first time I have tried that).
Lunch: I had the potatoe puree which I think is one of my favorites now.
Dinner: Turkey sausage and probably a salad.
Snack: Dark chocolate pudding

This is my 2nd week on ideal protein. Last week I thought the food was absolutely delicious. I had mushroom soup, chicken a la king soup, potatoe puree, chicken noodle soup, strawberry banana RTD shake, and the chocolate and lemon pudding, and the orange drink, pink lemonade drink, and the carmel nut bar. By the end of the week I wasn't crazy about the chicken a la king soup (tasted better the first time). Also, didn't really like the chicken noodle soup (I might have put too much salt in it). And the lemon pudding wasn't the best. Those are the only 3 foods I wasn't crazy about. Overall everything else was good. I've done nutrisystem in the past and IP food is in my opinion way better. Also, I think IP is a better diet.

Anyway, I had read on the forum some positive reviews on the Herb and Cheese omelet. I made a mistake and bought a box of the omelet for my second week. I bought the box because it's a little cheaper to buy the whole box instead of buying differant items. I'm not really liking the omelet at all. I have put meat in it. I have loaded it up with veggies. I have to force myself to eat it. Does anyone have a recipe that they think makes it taste really good to them? I know we are all different. I have 3 or 4 more packets and I don't want to waste them.

I love the herb and cheese omelette. I shake it up, I add a little sea salt, mushrooms, spinach and scramble it in a pan. Then I add 1 cherry tomato dices up small and some green onions. Somedays I sprinke a little cheesy popcorn topping on (it is 0/0/0.) It is very filling.

I love the recipe by FinnSteve for Zucchini pancakes:

Zucchini pancakes

Ingredients:
1pk of IP omelet mix (plain or herb)
1 1/2 c zucchini, shredded
(Optional - 1/2 c onion (red, white, or green) finely diced)
2 egg whites
sea salt & pepper

Directions:
1) Shred up the zucchini onto a paper towel or clean kitchen cloth & drain out some of the moisture of the zucchini.
2) Beat egg whites with a pinch of sea salt until fluffy
3) Add the Ideal Protein Omelete mix and beat until blended
4) Fold in the zucchini (and onions if using)
5) Spray cooking pan with PAM or other non-stick spray.
6) I use a 1 dl measuring cup to spoon batter into pan on med-hi heat
7) Cook until crispy on one side and then flip and crisp up the other side

I serve with Hot Sauce (zero carb/ zero sugar/ zero fat).

Makes 4 large cakes and is really filling.

It is located in the popcorn isle. Kernel Season's Popcorn Seasoning.
I LOVE the white cheddar on my mashed cauliflower and I use the cheesy jalapeño and nacho cheddar on my omelets.

Still recovering from the blechy IP broccoli cheese soup from yesterday! yuck yuck yuck! I wish it worked for me as a "sauce" over the 2 c of broccoli I took for lunch but I had to resort to a bar
Not a flavor I enjoy.

Today:
B IP Dk Chocolate pudding made with 8oz cold coffee, spinach, and coffee ice cubes (my fav breakfast!)
L: Mushroom soup mixed with yesterdays yucky lunch failure (but I pureed it all together) PLUS some other veggie. It was salvageable
S: IP SW cheese curls
D: Smoked roast beast, cukes & onion in ACV dressing, broccoli, big salad while watching the Cardinals win their way into the World Series. CHANGED: Turnip fries instead of cuke salad & broccoli. AND we are OUT OF LETTUCE!!!! How can this be???? All the greens in there are a BIG bag of spinach!!!! Oh well, I'm good. Otherwise, I would have gone to the store for lettuce.
